2 medium zucchini (approx. 430g)
2 eggs
1 tbs heavy cream
2.5 oz pork rinds (approx. 1 cup)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400F.
  • Cut the zucchini into matchsticks, ensuring that each stick has some peel left on.
  • Add the eggs and cream to a bowl and stir well.
  • Place the pork rinds in a food processor and process into breadcrumbs. Add the Parmesan, process again, then place them in a second bowl.
  • Dip each piece of zucchini into the egg mixture, then the pork rind mixture, and then place on a baking rack over a baking sheet.
  • Roast for 15-20 minutes until starting to crisp at the edges. Serve warm.

A baked zucchini fry with crushed almonds replacing bread crumbs makes a very light, tasty dish. Zucchini are prepped first to get rid of extra liquid so they do not become soggy in the oven. Like having fried food without the oil.

2 zucchini
1 tablespoon salt
2 eggs
½ cup ground almonds
½ cup grated Parmesan cheese
½ teaspoon dried Italian herb seasoning, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Cut zucchini into 3-inch lengths, then cut each piece into 9 fries. Place zucchini fries into a colander and sprinkle with salt. Let the zucchini pieces drain for at least 1 hour to remove excess liquid.
  • Beat eggs in a shallow bowl. Mix almonds, Parmesan cheese, and Italian seasoning in a second shallow bowl. Rinse salt off zucchini and pat dry with paper towels.
  • Dip each zucchini piece into beaten egg and roll in the almond coating. Place coated fries on prepared baking sheet.
  • Bake in the preheated oven until the zucchini are tender and the coating is crisp and browned, about 25 minutes, turning them halfway through cooking time.

Steps:

  • Preheat oven to 425°F.
  • Whisk eggs in a small bowl. In a separate bowl, combine parmesan cheese, almond flour, Italian seasoning, parsley, and salt & pepper.
  • Cut zucchini into wedges. Dip in beaten egg and then in parmesan cheese mixture.

2 zucchini (medium)
1 egg (beaten)
½ cup almond flour
½ cup Parmesan cheese (grated cheap stuff in the green can works well)
salt and pepper (pinch of each)
Oil for spraying (Olive oil is great for this recipe)

Steps:

  • Cut the zucchini in half crosswise and into sticks (aka fries) about 1/2 inch thick and 3-4 inches long.
  • In a shallow bowl, combine the almond flour, grated parmesan and a pinch of salt and pepper. Mix to combine. In a separate bowl beat the egg. Now you have a dipping station.
  • Dip zucchini in egg and then press into the flour mixture. Place on the air fryer rack or parchment covered baking sheet. You can repeat if you have any fries that need a little extra love at the end.
  • Working in batches if needed, place the zucchini fries in a single layer in the air fryer. Spritz each piece with oil.Air Fry for 10-12 minutes at 390F, or until brown and crispy.To make in the oven: Preheat to 425F, spritz the zucc's with a little oil and bake until golden brown.

  • Preheat air fryer to 400 degrees F (200 degrees C).
