3 cups bread flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup unsalted butter, chilled and cubed
1 cup light brown sugar
1 cup granulated sugar
2 eggs, chilled
2 teaspoons pure vanilla extract
1 cup bittersweet chocolate chips
1/2 cup semisweet chocolate chips

Steps:

  • In a large bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cold butter on medium speed, about 1 minute. Add the brown sugar and granulated sugar and mix until incorporated. Add the eggs and vanilla. Mix on medium-low speed until the mixture looks separated. Turn off the machine and add the dry ingredients. Mix on low speed just until the dough comes together. Turn off the machine and fold in the chocolate chips by hand using a rubber spatula.
  • Drop the dough onto a parchment-lined sheet tray in 1-cup mounds. Place the tray in the freezer and freeze for 1 hour.
  • Preheat the oven to 375 degrees F.
  • Bake straight from the freezer until still slightly under baked in the middle but golden brown around the edges and beginning to brown on top, 20 minutes.
  • Cool the cookies on the tray for 5 minutes before cooling completely on a wire rack.

Quick Easy and Delicious! I learned this recipe from many years of eating with the Mexican cooks at my restaurant. They like to sneak in breakfast before we open. I've grown to LOVE this breakfast. If you like spicy food, you will love this.

6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 eggs
¼ cup milk
½ teaspoon pepper
½ teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
½ cup salsa

Steps:

  • Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
  • Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
  • Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
  • Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.

3 tomatillos
1 jalapeno
1 clove garlic
1/2 cup chopped cilantro
Kosher salt
1 Hass avocado
1 lime, juiced
2 tablespoons olive oil
Kosher salt and fresh cracked black pepper
1 cup finely diced tomato
1/2 cup finely diced red onion
1 jalapeno, diced
1 tablespoon olive oil
1 lime, juiced
1/2 cup chopped cilantro
6 ounces fresh chorizo sausage (or 3 ounces dry chorizo)
6 large eggs
Eight 6-inch corn tortillas
Olive oil, for warming
1/2 cup crumbled Cotija
Cilantro leaves, for garnish
1/2 cup hot sauce
4 lime wedges

Steps:

  • For the salsa verde: Place the tomatillos, jalapeno, garlic and cilantro in a blender. Season with salt and blend until the mixture is just chunky.
  • For the avocado: Cut the avocado in half and remove the pit. Peel the skin and cut the flesh into medium-size pieces. Place the avocado in a bowl with the lime juice and oil. Season with salt and pepper. Stir lightly to mix.
  • For the pico de gallo: Add the tomatoes and red onions to a bowl. Dice the jalapeno, add to the bowl and mix it all together. Add the oil, lime juice and cilantro. Season with salt and pepper.
  • For the chorizo and eggs: Small dice the chorizo. Place in a large nonstick skillet over low to medium heat and cook until half crisp, about 7 minutes.
  • Crack the eggs into a bowl and whisk until the whites and yolks are mixed well. Add it to the pan. Mix the eggs and chorizo together with a rubber spatula and cook until the eggs are soft, about 8 minutes.
  • For the plating: Warm the tortillas on a griddle pan or in a medium skillet with a dash of oil for 10 seconds on each side. Place 2 on each plate. Divide the eggs, avocado, pico de gallo, Cotija and a few leaves of cilantro among the tortillas. Place the hot sauce and salsa verde in 2 separate ramekins. Garnish with the lime wedges.

  • Spoon eggs evenly into tortillas; fold and top with remaining 1/4 cup salsa.

Here is his grandmother's recipe for tortillas and the breakfast tacos aka migas' recipe, too. I altered the recipe slightly. FYI: this recipe is prepared easier and faster if you tag team with another person: one to make the tortillas and one to prepare the migas. Finally, check out the two recipes on Recipezaar for puerco pibil, another cooking segment offering also demonstrated by Robert.

2 cups unbleached white flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 cup butter, softened to room temperature or 1/8 cup butter and 1/8 cup lard
3/4 cup warm water, approximately
bacon drippings (optional)
1 large potato, peeled and diced small
1 large tomatoes, diced
1 medium white onion, peeled and diced
1 green jalapeno, minced
4 day old corn tortillas, cut up into strips slices
5 -6 eggs, lightly beaten
corn oil, for frying
real butter, for frying
salt and pepper, to taste

Steps:

  • Note: Tortilla recipe yields 8-10.
  • FLOUR TORTILLAS: In large mixing bowl combine the flour, salt and baking powder.
  • Cut in the butter (or butter and lard) using a pastry blender or your hands until mixture is incorporated and coarse, like wet sand.
  • Add 3/4 cup warm water and using your hands or a fork, form into a dough, not too sticky and not too dry. If too sticky, add more flour, too dry, add more water.
  • Knead the dough on a floured surface for a few minutes until no longer sticky; the dough should feel smooth, elastic and not dry.
  • Divide the dough up into 8-10 balls and arrange on a baking sheet.
  • Lightly dampen a tea towel with warm water, cover the dough and let rest for 20 minutes.
  • TACOS/MIGAS: Heat up about 2 tablespoons corn oil in a non-stick pan on medium heat and fry the potatoes until soft but not crispy.
  • Season potatoes with salt and pepper to taste.
  • Transfer potatoes to a paper towel lined plate.
  • In the same pan, heat up 2 tablespoons of corn oil and fry the tomato, onion and jalapeno until onion [just] begins to soften. Set aside and keep warm.
  • In the same pan, heat up some more oil (2 tablespoons or so) and fry up the corn tortilla strips until crispy.
  • Set corn tortilla strips aside on a paper towel lined plate and drain.
  • Using the same pan, heat up about 2 tablespoons butter and lightly scramble the eggs.
  • Combine the tomato mixture, corn tortillas strips and eggs on a platter. Set aside and keep warm.
  • Using a rolling pin, shape the flour tortillas into thin round circles about 6" in diameter. (Or use a wax paper lined tortilla press to form.).
  • Heat up a cast iron skillet on medium heat. (If you want, you can add a [~small~] amount of bacon drippings to the skillet to cook the tortillas).
  • Cook the tortillas until bubbles form and brown specks appear, about 1 minute. Turn over and cook other side, about another minute.
  • Continue cooking all the flour tortillas in the same manner.
  • Keep tortillas warm, stacking them one on top of the other until ready to serve. Do not allow to dry out! Use a dampened tea towel or tortilla warmer to keep tortillas pliable.
  • To serve, divide the potato/egg mixture onto the flour tortillas. Fold in half and eat!

2 medium potatoes
corm oil
salt, pepper
3 eggs
milk
veggie eggs:
cheap corn tortillas
tomato
onion
jalapeño
salt, pepper
3 eggs
milk

Steps:

  • TORTILLAS • Mix flour, salt, baking power and lard • Crumble together until coarse (like corn meal) • Add 3/4 cup warm water, mix until sticky, remove sticky clumps, add more water to bowl, repeat until all dough is sticky and combined into a big mound. • Kneed sticky dough in hands or in mixer for 2 minutes, until smooth and elastic • Break dough up into 8-10 golf ball sized balls • Dampen cloth with warm water and let cloth sit on dough for 20 minutes. (This is a good time to prepare and cook the eggs see below ) • Pre-heat pan medium-high • Flatten dough into discs, roll flat, place on heat, cook 8 seconds then flip, then cook 1-1 1/2 minutes until bubbles form, flip and press edges, move to tortilla warmer. POTATO EGGS • Peel 2 medium potatoes, chop • Fry in corn oil, medium heat, then add salt (kosher salt or sea salt) and pepper. • Cook until crisp but tender, then remove, drain and add more salt and pepper to taste. They should taste a bit like French fries. • Butter pan at medium-high, then reduce to medium, add 3 scrambled eggs (with milk), then potatoes. Cook slow (turn off heat before it overcooks). VEGGIE EGGS • Dice corn tortillas • Dice tomato, onion, jalapeno • Use oil to fry up corn tortillas, remove and drain, add salt and pepper • Drain excess oil from pan and throw in onions, tomatoes and peppers. Cook two minutes. Move to pan, add 3 eggs/milk and corn tortilla chips, cook a couple of minutes.

1 Tablespoon extra virgin olive oil
4 eggs
6 strips bacon (cooked)
1 Tablespoon milk
1 cup shredded cheddar cheese
1 cup re-fried beans
salt and pepper, to taste
8 flour tortillas (taco size)

Steps:

  • Dice potatoes and pepper
  • In a skillet over medium heat, cook the diced potatoes and peppers in the olive oil until completely cooked through and potatoes are soft.
  • In a separate pan whisk together milk and eggs and scramble them in pan until done.
  • Spread re-friend beans in center of each tortilla.
  • Top with eggs, potatoes and peppers, cheese, and bacon.
  • Fold tortillas in half forming tacos. Serve warm.
