SINFUL BAKED MAC AND CHEESE



Sinful Baked Mac and Cheese image

Number Of Ingredients 10

8 ounces elbow macaroni
1/4 cup butter (1/2 stick plus 1/2 teaspoon, separated)
1/4 cup flour
2 cups whole milk
1 cup whipping cream
2 cups 1 pound sharp white cheddar, shredded
1 cup 1/2 pound Gruyere, shredded
1/8 teaspoon sweet paprika (Hungarian)
Salt
Fresh black pepper

Steps:

  • Preheat the oven to 350° F.
  • Cook the elbow noodle in salted boiling water until al dente.
  • Strain and toss in 1/2 teaspoon of butter and stir until fully melted. This will keep the macaroni noodles from sticking to each other.
  • Prepare the cheese sauce by melting the butter in a large sauce pan.
  • Add the flour and whisk until a roux forms.
  • Cook over medium low heat for a minute or two more.
  • Add the milk and the cream.
  • Whisk until the roux has been completely dissolved and incorporated into the milk and cream.
  • Cook over medium heat, whisking occasionally, until the mixture thickens into a béchamel sauce.
  • Add half of the cheddar and half of the Gruyere. Reserve the remaining cheese.
  • Stir until all the cheese has melted and is integrated into the sauce.
  • Add the paprika, salt and pepper. Test to taste. Adjust as needed.
  • Remove the pan from the heat.
  • Add the macaroni noodles into the sauce in the pan and stir until everything is well incorporated.
  • Pour half of the macaroni mixture into a buttered 8 1/4 x 11-inch oven dish.
  • Sprinkle half of the remaining cheese.
  • Top with the remaining macaroni mixture and the rest of the cheese.
  • Bake until the cheese is fully melted and the macaroni and cheese is bubbling.
  • If desired, turn the oven to broil for two minutes to add some color to the top of the mac and cheese (optional).
  • Remove from the oven and allow the mac and cheese to cool for about 5 minutes.
  • Serve.

1 (16 ounce) package elbow macaroni
¼ cup butter
¼ cup all-purpose flour
¼ teaspoon dried thyme
¼ teaspoon cayenne pepper
⅛ teaspoon white pepper
3 cups milk
1 pinch ground nutmeg
¼ teaspoon Worcestershire sauce
1 teaspoon salt
3 cups shredded sharp Cheddar cheese, divided
1 teaspoon Dijon mustard
½ cup panko bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
  • Melt 1/4 cup butter in a large saucepan over medium heat. When the butter starts to foam and bubble, stir in the flour; cook on medium heat until flour just begins to turn pale yellow, 3 to 4 minutes. Add thyme, cayenne pepper, and white pepper; cook and stir another minute, then whisk in 1 cup of milk until smooth. Pour in remaining milk and whisk again. Bring the sauce just to a simmer.
  • Stir in nutmeg, Worcestershire sauce, and salt; simmer on medium-low heat until thickened, about 8 minutes, whisking often. Turn heat off, then add 2 1/4 cups of Cheddar cheese; stir until melted and combined. Add Dijon mustard.
  • Transfer the macaroni into a casserole dish, then pour in the cheese sauce; stir to thoroughly combine sauce with pasta. Mix panko bread crumbs and 1 tablespoon melted butter in a small bowl, and sprinkle crumbs on top of macaroni and cheese. Sprinkle remaining 3/4 cup of Cheddar cheese on top.
  • Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.

  • Place a saucepan over medium-low heat. Combine the cheese food, milk, and pepper in the saucepan; cook until the cheese has melted, stirring frequently. Stir in the drained macaroni until evenly coated.

The Easiest Baked Macaroni & Cheese image

There may be lots of recipes out there for macaroni and cheese, but this is the first one I ever found that you don't have to cook the macaroni before you bake it. It is also really simple to put together - all in the casserole dish you are baking it in! I got this from a newsletter of an organization. I take this to potlucks all the time and I always come home with none of it left. It's a dish I'm constantly handing out the recipe for; be sure not to use cheese that has been frozen and thawed because it will ruin the consistency of the dish. You can also cut down on the butter if you would like to lose some of the fat. This is not a real creamy cheesy type of macaroni and cheese, which can sometimes be a little too rich for our tastes. I've made those, but my family prefers this kind over any other.

2 1/2-3 cups elbow macaroni, uncooked
3 tablespoons butter, melted
1/4 teaspoon pepper
1 teaspoon salt
2 cups sharp cheddar cheese, shredded
4 cups milk

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in microwave.
  • Pour macaroni in 2-3 quart casserole dish. Pour butter over macaroni. Stir well to coat.
  • Add salt and pepper. Stir well.
  • Add cheese. Sometimes I may use a mixture of monterey, colby and cheddar, depending on what I have at the time. Mix well.
  • Add milk. Do not stir.
  • Bake uncovered in oven for 60 minutes. I do think this tastes best when it is still hot from the oven.

A co worker brought this to our potluck this week and it was true love for me. The amounts of ingredients are just estimates since she doesn't actually measure anything. If you prefer a more creamy mac n cheese she suggests adding more milk or sour cream.

1 lb cheddar cheese
1/2 lb mozzarella cheese
1/2 lb monterey jack cheese
1 cup parmesan cheese
16 ounces cottage cheese
8 ounces cream cheese
16 ounces sour cream
10 ounces canned milk
1/2 cup butter
2 eggs
1 1/2 lbs large elbow macaroni noodles
1 cup mixed cheese, for top

Steps:

  • Preheat oven to 350 degrees. Cook noodles according to directions until al dente. Mix cheeses, sour cream and butter into noodles. After cheeses are mixed in completely, add canned milk and the 2 eggs. Mix again. Pour into a baking dish and top with remaining cup of cheese, cover with foil and bake 35 minutes. Uncover and bake another 10 minutes.
