GRANDMA'S BAKING POWDER BISCUITS

Grandma's Baking Powder Biscuits image

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

BAKING POWDER BISCUITS

Baking Powder Biscuits image

This classic recipe makes about 8 biscuits (2 1/2 inch diameter). I like to brush melted butter on the tops after the biscuits come out of the oven. If you have leftovers, do not refrigerate. Just wrap them in plastic, and heat the next day in the oven, which is the best way to re-heat all bread products.

Time 17m

Number Of Ingredients 6

2 cups AP flour
1 tbs. baking powder
1 tsp. salt
1/8 tsp. baking soda
1/3 cup cold butter or cold Crisco Butter Flavor Shortening
1 cup milk

Steps:

  • Heat oven to 425 F. Combine dry ingredients together. Cut in butter or shortening until dough is coarse, pea size crumbs. (I use a fork.) Add milk, combine, knead a few times. Place dough on a floured area, and pat it into a 1 inch tall round. Cut biscuits and place on a parchment lined bakig sheet. Bake 12-14 minutes. (Biscuits, in general, do not rise uniformly, so if you're new to biscuit-making, enjoy their lop-sided imperfections.)

  • Measure shortening/butter into the same bowl, and cut into the dry ingredients using a pastry cutter or fork(s). The idea is to work it in until it’s evenly distributed throughout, in very small pieces.
  • Add milk/buttermilk, stir just until dough comes together. Don’t over stir or beat it. If dough is too crumbly, add a small amount of extra milk. If the dough is sticky, add a small amount of flour.

  • For best results, chill your butter in the freezer for 10-20 minutes before beginning this recipe. It's ideal that the butter is very cold for light, flaky, buttery biscuits.
  • Remove your butter from the refrigerator and either cut it into your flour mixture using a pastry cutter or (preferred) use a box grater to shred the butter into small pieces and then add to the flour mixture and stir.

  • Baking Soda. If you would like to use baking soda to replace baking powder you just need to combine a half teaspoon of lemon juice with 1/4 teaspoon of baking soda.
  • Cream of Tartar. While this is one of the best substitutions for baking powder, do not look for it in cream form. You can find cream of tartar in the spice aisle and it is a powder.
  • Vinegar. If you have white vinegar on hand and baking soda, you can make your own baking powder substitute with 1/2 teaspoon of vinegar with 1/4 teaspoon of baking soda.
  • Yogurt. Using yogurt to replace baking powder when making biscuits takes only a few short steps. First make sure it is regular plain yogurt, not Greek or flavored.
  • Buttermilk. If you have buttermilk in your fridge you can use it exactly the same way you substitute using yogurt.
  • Sour Milk. If you don’t have buttermilk you can create your own (you can use this ratio to substitute buttermilk in any recipe). Measure out one cup of milk in a pitcher and add one tablespoon of lemon juice or white vinegar.
  • Molasses. This is another substitution that you will need to combine with baking soda in order to replace baking powder when making biscuits. Combine 1/4 cup of molasses with 1/4 teaspoon of baking soda to use instead of a teaspoon of baking powder.
  • Egg Whites. You can easily replace baking powder when making your biscuits by separating your eggs and whipping the egg whites until they form a stiff peak.
  • Club soda. Because club soda has baking soda in it, it makes it a great substitute for baking powder. All you have to do is replace the amount of milk your recipe calls for and you will still be able to enjoy light fluffy biscuits.
  • Self-Rising Flour. If you do a good deal of baking you may already have self-rising flour on hand. Because self-rising flour already has baking powder and salt in it, you can just use this flour in place of all-purpose flour, baking powder, and salt.

2015-03-24 The recipe states, "Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs." You want to have a fairly homogenous mixture, rather than having large flakes of butter visible in the flour. If you squeeze some of the flour-fat mixture in your hands, it'll form a ball. Unlike pie dough, you don't need to use ice-cold ingredients to make biscuits--another reason why ...
