SINFUL CARROT CAKE SUPREME
Absolutely sinful, go ahead, just one bite it won't hurt you. You will also need my recipes for Cream Cheese Fluff #28967 and Golden Lemon Sauce #29110 to top each piece of cake.

Steps:
- Preheat oven to 325 degrees.
- Combine mincemeat, carrots and nuts and then toss with 1/2 cup flour.
- Set aside.
- In mixer combine sugar, oil and lemon beat well.
- Add eggs one at a time beating well.
- Stir together remaining 1 1/2 cup flour, baking powder, baking soda and salt; gradually add to batter.
- Beat until smooth.
- Stir in mincemeat mixture, mixing well.
- Put in a greased and floured bundt pan.
- Bake one hour or until pick inserted comes out clean.
- Cool 15 minutes; turn out of pan.
- Serve with Cream Cheese Fluff and warm Golden Lemon Sauce.

- Cake:.
- Cream the oil, carrots, sugar, pineapple, eggs and vanilla.
- Add flour, cinnamon, salt, baking soda and baking powder.
- Add pecans and coconut.
- Combine dry mix with creamed mix.
- Pour into lightly greased 13" x 9" pan.
- Bake the cake at 325 degrees for 40-60 minutes.
- Cake icing:.
- Cream all the ingredients together until creamy. Toast some nuts and coconut and add to creamed mixture.Spread on cooled cake.
- Decorate as desired.
COPYCAT CRUNCHWRAP SUPREME
If you are a fan of the Crunchwrap Supreme from the famous fast food chain then you've come to the right place. Not only can you make it at home for the fraction of the price, the beef is actually present. I always get my beef on sale and make 4 at a time but wrote this up for 1 serving to suit your individual needs. Serve with taco sauce if desired.

- Crumble beef into a skillet over medium heat. Add taco seasoning and cook until brown and crumbly, about 5 minutes. Drain.
- Place the large tortilla on a clean work surface. Spoon meat onto the center and spread cheese sauce over the meat.
- Place tostada shell on top of the cheese. Spread sour cream over the tostada. Top with lettuce and tomato.
- Center the small street size tortilla on top of the lettuce mixture. Tuck and fold the outer large tortilla around the sides and top of the small tortilla until sealed.
- Place sealed side down in a skillet over medium heat and cook for 3 minutes. Using a spatula, flip the crunchwrap and cook for 3 minutes more.

This creamy carrot casserole is always a hit. An easy-to-fix but very special side dish, it goes well with almost any meat or poultry. Even though I serve these dressed-up-carrots often, my family still requests them for Christmas dinner.

- Place carrots in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender. Meanwhile, in a small skillet, saute onion in butter until tender. Steps:
- Position 1 oven rack in the bottom of the oven and 1 in the middle. Preheat the oven to 350 degrees F (175 degrees C). Unroll pie crust and place in a 9-inch pie plate, crimping the edge.
- Bake pie crust on the middle rack of the preheated oven for 20 minutes.
- While the crust is baking, combine eggs and sugar in a large bowl; beat with an electric mixer on medium speed until well combined. Add half-and-half, milk, rum, and salt; mix on low until incorporated. Mix nutmeg and cinnamon together in a small bowl.
- Remove crust from the oven and brush with egg white; bake for another 5 minutes.
- Remove crust from the oven; increase temperature to 400 degrees F (200 degrees C). Carefully pour filling into the pie crust. Sprinkle with spice mixture.
- Bake on the bottom rack of the preheated oven for 10 minutes. Reduce the heat to 325 degrees F (165 degrees C). Move the pie to the middle rack and bake until the middle of the pie is almost set, about 25 minutes. Place on a cooling rack; it will continue to cook after it's taken out of the oven.

- In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. beat in vanilla. , In a bowl, whisk cocoa and water until smooth; stir in buttermilk. Sift together flour, baking soda, baking powder and salt; add to creamed mixture alternately with cocoa mixture. Beat until smooth., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. - Cream Sugar and Oil together and add eggs one at a time.
- Add cake mix and nectar alternately.
- Mix well.
- Bake in tube pan for 1 hour @ 325 degrees.
- Let cool in pan 20 minutes.
- Meanwhile mix the lemon juice and sugar together and cook on the stove until sugar is dissolved.
- Remove cake from pan and spread glaze on top and sides.
