Singhare Ke Atte Ki Barfi ( Singhara Flour Barfi) image

This is had during days of fasting in India. It's easy to make and very tasty too. Very popular with housewifes.

1 cup sugar
3 cups water
1 tablespoon ghee
1 cup singhara flour
chopped almonds
chopped pistachios

Steps:

  • Heat ghee in a non-stick pan.
  • Add flour, sugar and 1 1/2 cups water.
  • Mix well.
  • Allow to cook for a few minutes.
  • Once the mixture leaves the sides of the pan, remove from heat.
  • Put into a plate.
  • Let it set.
  • Once cool, cut into pieces.
  • Garnish with chopped nuts and serve.

  • To make this simple and quick recipe, grease the barfi tray with a little ghee all over the surface. Keep it aside. Preheat ghee in a non-stick pan on a medium flame. After the ghee heats up, add water chestnut flour to it and saute until it turns light brown. Add sugar and water to the flour and stir continuously to the point where the ghee starts leaving the sides of the pan. At this stage, add cardamom powder and dry fruits, and cook for another 2 minutes stirring well.
  • Pour the barfi mixture into the greased tray and even out the surface of the mixture. Transfer this tray to the fridge and let it chill for 10 to 15 minutes. Cut into desired shapes and sized and enjoy.
