RECIPE FOR ONE BIG CHOCOLATE CHIP COOKIE

This recipe only takes about 5 minutes prep, a few prep tools, and a quick bake in the oven and you've got yourself an unbelievably delicious chocolate chip cookie!

2 Tbsp (28g) salted butter
3 Tbsp (38g) packed light-brown sugar
1 pinch salt
1 tbsp whisked egg*
1/4 tsp vanilla extract
1/3 cup (40g) all-purpose flour
1/8 tsp baking soda
4 Tbsp (42g) chocolate chips, (divided)

Steps:

  • Preheat oven to 350°F (180°C). Place butter in a microwave safe mixing bowl. Heat in microwave until nearly melted (you want it almost all the way melted, remove from microwave just before completely melted and stir to fully melt. You just don't want it too hot or it will cook the egg and melt the chocolate chips when stirring).
  • To melted butter, add brown sugar, salt, 1 tbsp egg, the vanilla, flour and baking soda. Stir with a spoon until well combined, about 20 - 30 seconds.
  • Mix in 3 tablespoons of the chocolate chips.
  • Shape dough into a 3 1/2-inch disk on a Silpat or parchment paper lined baking sheet, gently press remaining 1 Tbsp chocolate chips randomly over top and sides of cookie.
  • Bake in preheated oven 12 - 14 minutes, until cookie is golden. Serve warm or allow to cool on a wire rack then store in an airtight container.

2 tbsp brown sugar
1 tbsp caster sugar
1 egg yolk
1/4 tsp vanilla extract
1/3 cup plain flour
Pinch of salt
1/8 tsp baking soda
1/4 cup choc chips

Steps:

  • Preheat oven to 180°C and lightly grease a 12.5cm/5" cast iron skillet with some butter or non-stick spray.
  • Combine the softened butter and sugars in a small bowl and mix until thoroughly combined.
  • Add in the yolk and vanilla and keep stirring until integrated.
  • Finally add in the dry ingredients and choc chips, and stir until just combined (don't overwork the mixture or it can become tough).
  • Press the mixture evenly into the skillet and bake for 12-14 minutes, until the cookie is golden brown.
  • Enjoy!

3 tablespoons packed brown sugar
1 and 1/2 tablespoons white sugar
1/2 teaspoon vanilla extract
1 large egg yolk ((discard or save whites for another recipe))
1/4 teaspoon baking soda
1/2 teaspoon cornstarch, (optional)
1/2 cup white, all-purpose flour
6 tablespoons chocolate chips ((we prefer milk chocolate))

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl, beat together the ROOM TEMPERATURE butter (if it is melted at all these cookies will be flat. Don't microwave it) with the brown and white sugar until creamy.
  • Add in the vanilla extract, egg yolk, baking soda, and cornstarch. (Add 1/8 teaspoon salt here if using unsalted butter)
  • Beat until just combined.
  • Add in the flour and chocolate chips and beat until just combined.
  • Form 3 evenly sized, large and tall balls of cookie dough
  • Place the cookie sheet with cookie balls in the freezer for 15 minutes.
  • Remove and immediately bake for 9-14 minutes or until very lightly browned around the edges. (Cookies are always best slightly under-baked!)
  • If desired (pretty appearance + more chocolate!), press a few additional chocolate chips into the tops of the cookies right after pulling them out of the oven.

1/2 cup gluten free rolled oats
1-3 T granulated sweetener of choice (I used a stevia blend, monkfruit*)
1 scoop vanilla protein powder (optional)
2 T smooth cashew butter
1 1/2 T light agave nectar (can sub for pure maple syrup or dark agave syrup)
1/2 tsp blackstrap molasses (can sub for extra agave/maple syrup**)
1/2 tsp vanilla extract
pinch sea salt
Dairy free milk***
2-3 T dairy free chocolate chips

Steps:

  • Add the rolled oats into the blender/food processor, and blend until a flour is formed. Add the rest of the ingredients, except for the milk and several chocolate chips. Blend until fully immersed. If batter is too thick/sticky, add a tiny amount of dairy free milk to desired batter thickness.
  • Remove from blender/food processor and place into a bowl. Top with remaining chocolate chips and enjoy!
  • Blend oats until a fine flour is formed.
  • In a large mixing bowl, combine your oat flour, granulated sweetener, protein powder, sea salt and mix well.
  • Stovetop or in the microwave, melt your nut butter with sticky sweeteners. Pour into the dry mixture, except for the chocolate chips. Mix very well until combined. If dough is too thick, add dairy free milk until desired batter is formed. Stir through chocolate chips and mix until combined. Transfer for a bowl and enjoy!
