SISTER MABEL'S CARAMEL CORN

I don't know who Sister Mabel is, but my mom and grandmother have always made this and it is divine. It is unique because it uses both baking soda and cream of tarter. It can be difficult to get the temperature right for the candy; the final product should be crisp and crunchy, not sticky. I always double this and it makes for a full oven!

2 cups light brown sugar, firmly packed
1/2 cup light corn syrup
1/2 cup butter
1/4 teaspoon cream of tartar
1 teaspoon salt
1 teaspoon baking soda
6 quarts popped corn

Steps:

  • In 2½ quart saucepan, combine brown sugar, corn syrup, butter, cream of tartar, and salt. Bring to boil, stirring over medium high heat.
  • Stirring constantly, boil rapidly until mixture reaches 260° on candy thermometer.
  • Remove from heat. Stir in baking soda quickly but thoroughly. It will bubble!
  • Pour at once over popped corn in large baking pan. Stir gently until all kernels are coated. If you are doubling it you will need someone to help you do this FAST. Bake at 200° for 1 hour, stirring 2 or 3 times during baking.
  • Turn out at once on wax paper. Spread apart and allow to cool completely. Break into small clusters. Store in tightly-covered containers.

Steps:

  • In 2 1/2 quart saucepan, combine brown sugar, corn syrup, butter, cream of tartar and salt. Heat to boiling, stirring over medium-high heat. Stirring constantly, boil rapidly to hard ball stage, 260 degrees (about 5 minutes). Remove from heat. Stir in baking soda quickly but thoroughly and pour at once over popcorn in large greased roasting baking pan. Stir gently until all kernels are coated. Bake in preheated 200 degree oven for 1 hour, stirring 2 or 3 times during baking. Turn out at once on waxed paper, spread apart and allow to cool completely. Break apart and store in tightly covered container.

2 packages microwave popcorn (not butter flavored)
4 tablespoons butter
3 tablespoons water
3/4 cup sugar
1 1/2 teaspoons ground cinnamon

Steps:

  • Prepare popcorn in microwave according to package directions. Pour popcorn into 1 or 2 large bowls. (You will need plenty of room to toss with hot sugar mixture.)
  • Meanwhile, in a small saucepan over medium heat, melt butter. Add water, sugar and cinnamon, increase the heat, and bring to a boil. Boil for 3 to 4 minutes. Remove from heat. Be careful; the sugar mixture is extremely hot! Pour half of mixture over the popcorn. Carefully stir or toss to combine. Add remaining sugar mixture and combine. Serve.

1 pound brown sugar
1 14 ounce can sweetened condensed milk
1 cup karo syrup (light corn syrup)
1/2 cup butter
1 cup unpopped popcorn

Steps:

  • Pop your popcorn in an air popper machine. My machine only allows 1/2 cup of kernels at a time so I had two separate batches that I had to pop.
  • Cook the brown sugar, Karo syrup, and 1/2 cup of butter over the stove on medium high heat and bring to a boil.
  • Add the sweetened condensed milk. Stir continually for about 3 to 4 minutes until it gets to the soft ball stage (it clings together when you drop some in cold water). It will burn if you cook it too long, so make sure you are stirring continuously and watch it closely.
  • When it is finished cooking, take your pan off the stove and pour the caramel sauce over your air popped popcorn. Mix until all the popcorn is completely coated. You will need a very large bowl to mix it all together.

1 cup butter
2¼ cups brown sugar (firmly packed)
⅛ teaspoon salt
1 cup light corn syrup
14 ounces sweetened condensed milk (1 can)
1 teaspoon vanilla

Steps:

  • Melt butter over stove top. Add brown sugar and salt, mixing well.
  • Stir in corn syrup.
  • Gradually add milk, stirring constantly.
  • Cook and stir over medium heat until candy reaches firm ball stage (245 degrees).
  • This will take 12-15 minutes approx.
  • Remove from heat and stir in vanilla.
  • Pour into greased 9x13 pan. Let cool.
  • Cut into 48 pieces with a sharp knife.
  • Optional: Wrap each piece in wax paper.

I found this recipe on allrecipes.com courtesy of AnitaLouise, and it is terrific. Nice easy and delicious recipe. She says it is from an Amish family who packages this treat for gifts at Christmas. Serving size is estimated. It made a humongous never ending bowl.

7 quarts plain popped corn
2 cups dry roasted peanuts (optional)
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1 cup butter (recipe calls for margarine, but I prefer butter)
1/2 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into 2 greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat oven to 250°F Combine the brown sugar, corn syrup, butter, and salt in a saucepan.
  • Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans and stir to coat.
  • Don't worry too much at this point about getting it to coat all of the corn.
  • Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes.
  • Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces.
  • Allow to cool completely, then store in airtight containers or resealable bags.

Steps:

  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.

  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
