SIZZLING STEAK WITH SHALLOT MARINADE

Steps:
- Put the steak in a shallow dish and sprinkle with the shallots, vinegar, oil, sea salt and ground black pepper. Rub over the meat with your hands. Leave for at least a hour, or overnight in the fridge.
- Heat a griddle pan or barbecue. Cook the steaks for 3-4 mins on each side until well browned. Transfer to a board, cover with foil and rest for 5 mins.
- Serve thinly sliced with new potatoes and salad, or in tortillas, with lettuce, avocado and soured cream.

I HAVE used this recipe since I was a bride and through the years it was a favorite with my husband and our growing family of three boys. We usually consumed the entire round steak in one meal. The flavor that makes it unique is the touch of rosemary.

- Broil steaks 4-6 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., In a small bowl, combine the remaining ingredients; sprinkle over steaks. Broil 2 minutes longer or until topping is golden brown.

Steps:
- Peel onions and cut into wedges. Beat the thinly sliced meat slightly with a meat mallet.
- Mix the water and baking soda, pour over steak and leave to stand 1 hour.This helps to tenderise the meat, But not an essential step.
- Heat 2 tbsp oil in a pan or wok . cook onions until nice and caramelised. Remove the onions from pan and arrange on a plate.
- Add 2 tbsp oil to the pan ,add the drained steak and cook over high heat to dry the water and brown the meat.
- Add the sauces, wine and sugar to the pan with the steak . Return to the boil,reduce heat and simmer for 10-15 minutes or until tender.
- Spoon the meat over the onions and serve.

- Combine the steak, salt, sugar, garlic, ginger and lemon grass and the black pepper and marinate over night in an air tight container.
- Heat a frying pan or wok and add a little oil, add the onion stir-fry until limp but not cooked.
- In small batches add the meat mixture until nearly cooked.
- Heat the wok to high again and then add all the ingredients, stirring until cooked.
- Served with steamed rice.

Our mom's steak marinade is the BEST! It's been in our family forever. Mix a few simple ingredients together for the marinade; this steak is so moist and flavorful.

- Mix together vegetable oil, Worcestershire sauce, pepper, apple cider vinegar, soy sauce, dry mustard, and lemon juice in a Ziploc bag or an airtight container (like tupperware or rubbermaid).
- Add 3 pounds of steak (about 6) to the marinade (any cut of steak will work).
- Store in fridge to marinate for about 8 hours. Flip over the steaks halfway through marinating.
- Grill over medium-high heat to your liking
