VANILLA DUTCH BABY (PUFFED PANCAKE)

3 tablespoons butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon sugar
2 teaspoons pure vanilla extract
Pinch salt
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
  • Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
  • Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
  • Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.

Steps:

  • Melt butter in a 10-inch cast-iron skillet over medium-high heat. Add flour mixture and transfer to oven. Bake until pancake is golden brown, 15 to 20 minutes.

¼ teaspoon fine salt
¼ teaspoon pure vanilla extract
3 large eggs, at room temperature
⅔ cup milk, at room temperature
3 tablespoons clarified butter, melted
⅓ cup fresh blueberries, or more to taste
1 tablespoon unsalted butter, melted
½ Meyer lemon, juiced
2 tablespoons powdered sugar, or to taste
2 tablespoons maple syrup, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine flour, salt, vanilla extract, eggs, and milk in a high-speed blender. Blend on high speed until completely smooth and very thin, about 1 minute.
  • Heat a 9- or 10-inch cast iron skillet over high heat. Pour clarified butter into the skillet and use a pastry brush to grease the sides. Heat butter until just starting to smoke.
  • Quickly and carefully pour the batter into the center of the skillet, then sprinkle blueberries over top. Transfer skillet to the center of the preheated oven and bake until browned and nicely puffed, 20 to 25 minutes.
  • Carefully remove from the oven and immediately brush the top with melted butter. Squeeze lemon juice over top as Dutch baby deflates. Dust with powdered sugar.
  • Cut in wedges to serve and drizzle with maple syrup.

Imagine my dismay when I discovered that the online version of my preferred breakfast popover had garnered more than the normal number of negative comments. So, back to the blackboard we went and now, I'm pleased to offer a revised, repaired, and re-imagined Dutch baby recipe. Your patience has been rewarded. This recipe first appeared in Season 12 of Good Eats.

3 tablespoons unsalted butter, divided
1/2 cup all-purpose flour
3 tablespoons sugar
1/2 teaspoon kosher salt
2 large eggs, at room temperature
1/2 cup whole milk, at room temperature
1/2 teaspoon vanilla extract
Powdered sugar, for serving
Lemon wedges, for serving

Steps:

  • Heat oven to 375ºF.
  • Put 1 tablespoon butter in a 10-inch cast-iron skillet and heat the skillet in the oven for 10 minutes. Melt the remaining 2 tablespoons butter and set aside to cool slightly.
  • Pulse together the flour, sugar, and salt in the bowl of a food processor. Add the eggs, milk, vanilla extract, and melted butter, and blend the batter until smooth and frothy, 30 to 45 seconds.
  • Carefully remove the hot skillet from the oven and immediately pour the batter into the center. Bake for 20 minutes; do not open the oven while baking. The Dutch baby will puff up in the center and the edges will be dark and crispy.
  • Serve warm with a sprinkling of powdered sugar and lemon wedges for squeezing.

3/4 cup milk
3 large eggs
1/2 teaspoon vanilla extract

Steps:

  • 1. Preheat your oven to 425 degrees.
  • 2. Place the butter into a 10" cast iron skillet or baking pan. Heat in the oven for 1-2 minutes, or just until the butter has melted.
  • 3. Add the flour, sugar, cinnamon, eggs, milk, and vanilla extract into a blender.
  • 4. Pulse or blend until fully combined.
  • 5. Pour the batter right over the top of the melted butter. Do not stir.
  • 6. Bake 15-18 minutes, or until the pancake is just starting to brown around the edges and the middle has set.
  • 7. Serve with fresh fruit, powdered sugar, or warmed syrup.

Steps:

  • Place a 9 Inch Skillet in the oven and preheat to 450 degrees Fahrenheit.
  • Heat the milk in the microwave for 20 seconds.
  • In a medium bowl beat the eggs, then stir in the milk.
  • Slowly whisk in the flour and salt until smooth.
  • Carefully remove the skillet and add the butter to coat the inside.
  • Add batter to the skillet and place it back in the oven. Bake 12-14 minutes, or until browned and puffy.
  • Serve plain or add toppings as desired.

½ cup milk
1 tablespoon maple syrup, plus more for serving

Confectioners' sugar, for serving (optional)
Fresh berries, for serving (optional)

Steps:

  • Preheat oven to 400°F and set an oven rack in the middle position. Put a 10-inch cast iron skillet or oven-safe nonstick pan into the oven and heat for at least 5 minutes.
  • In a blender, combine the eggs, flour, milk, 1 tablespoon maple syrup, the salt, and vanilla. Blend until completely smooth, scraping down the sides of the blender jar as necessary, about 30 seconds.
  • Open the oven door and drop the butter into the preheated skillet. Close the oven and allow the butter to melt, about 2 minutes (do not let it burn). Carefully remove the hot skillet from the oven and place an oven mitt or dishtowel over the handle to remind yourself that it's hot. Pour the batter into the buttered skillet and carefully place the skillet back into the oven. Bake for about 20 minutes, until puffed and golden. Carefully remove the skillet from the oven (again, place an oven mitt or dishtowel over the handle to remind yourself that it's hot). Dust with confectioners' sugar and top with berries, if desired, then cut into wedges and serve with maple syrup.
