Skinny Garlic Parmesan Fries image

This simpler version of fries is healthier, thanks to baking instead of frying. The fries are seasoned with a simple garlic oil, fresh herbs and a sprinkling of Parmesan cheese. A great side dish for any meal.

1 Tablespoon olive oil
3 cloves garlic, crushed
2-3 medium russet or yukon gold potatoes, washed and dried
kosher salt and black pepper, to taste
1 1/2 Tablespoons fresh grated Parmesan cheese (or more to taste)
fresh parsley, minced

Steps:

  • Combine the oil and crushed garlic in a small bowl. Preheat the oven to 425ºF. Lightly coat a baking sheet with cooking spray.
  • Slice the potatoes into 1/4-inch thick slices. Place on the baking sheet and toss with the oil and garlic until evenly coated. Season with salt and black pepper. Spread out in a single layer. Bake uncovered in the center of the oven until tender crisp and golden brown, about 15-20 minutes on each side. Sprinkle with parmesan cheese and parsley and serve warm.

Warning...These are highly addictive!!! You'll probably end up making them all the time. I know I do! Such a fantastic way to jazz up fries. They're baked in the oven with garlic, a little olive oil and once baked, sprinkled with Parmesan cheese and a little garlic powder. Each serving has 172 calories and 6 grams of fat. You could easily cut this recipe in half if you don't need 5 servings.

1 tablespoon garlic, minced very fine
2 tablespoons olive oil
2 large (russet) baking potatoes ((12 ounces each or 1½ pounds total))
Salt and pepper, to taste
2 tablespoons parmesan cheese
½ teaspoon garlic powder, or to taste

Steps:

  • Preheat oven to 450 degrees. Line 1 baking sheet with foil and coat baking sheet with cooking spray.
  • Cut the potatoes lengthwise in half and in half again. Cut each piece into ¼-½ inch thick strips. Place on the baking sheet and toss with the olive oil and garlic. Use your hands to evenly coat. Spread the potatoes evenly over the entire pan. Season with a little salt and black pepper. Bake uncovered in the center of the oven until tender crisp and golden brown, about 20-25 minutes on each side. Baking time will vary depending on how thick your pieces are and your oven. Set your timer for 20 minutes and check.
  • Remove from oven and sprinkle all over with Parmesan cheese and a little garlic powder. Add a little more salt and pepper, if desired.

¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes.
