1/3 cup chopped cored apple or finely chopped celery
1 hard-cooked egg, peeled and chopped
2 tablespoons plain fat-free yogurt
2 tablespoons light mayonnaise or salad dressing
1/4 teaspoon salt
1/4 teaspoon black pepper
8 slices whole wheat bread
4 leaf lettuce or romaine leaves
1 medium tomato, thinly sliced
1/2 of a small cucumber, thinly sliced (about 3/4 cup)

Steps:

  • In a medium bowl, stir together chicken, apple, and egg. Add yogurt, mayonnaise, salt, and pepper; stir to combine.*
  • Top half of the bread slices with lettuce leaves. Add tomato slices, cucumber slices, and some of the chicken mixture to each sandwich. Top with remaining bread slices. Cut each sandwich in half to serve.
  • *Make-Ahead Directions: If desired, cover and chill the chicken mixture for up to 4 hours before assembling sandwiches.

1 can (14.5 oz) diced tomatoes with garlic and onion, undrained
2 tablespoons olive oil
4 small roasted or grilled bone-in chicken breasts
4 cups cubed Italian bread
1/8 teaspoon salt
1/8 teaspoon black pepper
2 medium cucumbers, halved lengthwise and sliced
2 cups torn fresh spinach and/or basil

Steps:

  • For dressing: Use a spoon to remove 2 tablespoons of the tomato liquid from diced tomatoes, place in a small bowl and combine the liquid with 1 tablespoon of the olive oil; set aside.
  • Remove meat from roasted chicken. Cut meat into pieces.
  • In a skillet, heat the remaining 1 tablespoon oil over medium heat. Add bread cubes, salt, and pepper. Stir for 5 minutes or until golden. Remove from heat. Add diced tomatoes; toss to combine. Divide bread mixture among four serving plates. Top with cucumbers, chicken, and spinach. Serve with dressing.

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.

1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon chili powder
1/4 cup finely chopped fresh coriander
1/4 cup finely chopped fresh mint leaves
a pinch of sugar
2 poached whole skinless boneless chicken breasts (about 1 1/4 pounds), minces (about 3 cups)
1/3 cup finely chopped shallot
1/3 cup thinly sliced scallion
1/4 cup mayonnaise, or to taste
1 loaf of Cumin Quick Bread
about 1/2 cup mayonnaise for garnish
finely chopped fresh parsley leaves for garnish

Steps:

  • Make chicken salad:
  • In a large bowl whisk together the lime juice, the salt, the chili powder, the coriander, the mint, and the sugar, stir in the chicken, the shallot, and the scallion, and stir in the mayonnaise. (The chicken salad may be made 1 day in advance and kept overed and chilled.)
  • Cut the bread into 1/3-inch-thick slices, spread each of half the slices with a scant 2 tablespoons of the chicken salad, and top the chicken salad with the remaining slices. Cut each sandwich in half. Spread a thin layer of the mayonnaise on one of the edges of each sandwich and dip it in the parsley.

4 lettuce leaves

Steps:

  • In a large mixing bowl, combine chicken, celery, grapes, cranberries and pecans.
