Skinny Mocha Coffee Frappe image

I recommend you keep these ingredients on hand for when that "designer coffee urge" hits! I used chocolate pudding in this recipe and it was so yummy. A great afternoon pick me up!

8 oz light vanilla almond milk
2 tsp instant coffee dissolved in as little hot water as possible
1/2 pkg small package sugar free instant pudding, chocolate or vanilla
1 generous handful of ice cubes
1/2 tsp vanilla extract, optional
to taste extra sweetener of choice, optional
drizzle sugar free chocolate syrup, optional

Steps:

  • 1. You need a good blender for this to avoid chunks of ice remaining in your drink. You may also substitute a lesser amount of espresso powder for the instant coffee. We don't have espresso powder here.
  • 2. Blend the almond milk, coffee concentrate and pudding mix until thickened and smooth. You may add vanilla and extra sweetener if you wish, the pudding mix has always been plenty sweet for me. I mix the coffee and hot water in my tall plastic "to go" cup so I can just pour the drink in on top when done.
  • 3. Add a handful of ice cubes and blend until smooth. If too thin, add a few more cubes until you reach your desired consistency.

1 teaspoon instant coffee
3 teaspoons vanilla
1 1/2 cups water
1/2 cup skim milk
1 teaspoon unsweetened cocoa
1 tablespoon stevia or 1 tablespoon sugar

Steps:

  • In a cup mix coffee and water and stir till combined.
  • Place in a shallow container, cover and freeze for 4 hrs or overnight.
  • Once coffee is frozen, place in a blender with the 1/2 c milk, vanilla, Stevia, and cocoa.
  • Blend till combined.
  • Note: you can substitute the instant coffee & water with 1 1/2 cups strong brewed coffee-just freeze it.
