1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

1/2 cup sour cream
1/2 cup chopped walnuts
2 medium bananas (mashed)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large bowl, mix together the butter and sugar. Add the eggs, vanilla and lemon juice. Mix well. In a separate bowl, combine the flour, baking soda, baking powder and salt. Once fully combined, pour into the butter mixture. Mix until smooth.
  • Mash the bananas with a fork or a potato masher. Fold in the sour cream, walnuts and mashed bananas. Spread the mixture evenly into the greased 9x5 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 60 minutes (or until a toothpick comes out clean from the center of the loaf).
  • Remove from oven and allow the bread to cool in the pan for 10 minutes. Then remove and place on a wire rack to cool completely.

2 tablespoons unsalted butter, softened
2 tablespoons cream cheese
1 cup white sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
⅛ teaspoon salt
1 cup mashed overripe bananas
½ cup milk
2 tablespoons dark rum, or rum flavoring
½ teaspoon lime zest
2 teaspoons lime juice
1 teaspoon vanilla extract
¼ cup chopped toasted pecans
¼ cup flaked coconut
¼ cup brown sugar
2 teaspoons unsalted butter
2 teaspoons lime juice
2 teaspoons dark rum, or rum flavoring
2 tablespoons chopped toasted pecans
2 tablespoons flaked coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease two 8x4 inch loaf pans.
  • Beat together 2 tablespoons of softened butter and cream cheese in a large bowl until fluffy. Slowly beat in sugar until well incorporated. Add the egg and mix well. Sift together the flour, baking powder, baking soda, and salt in a separate bowl. In a different bowl, mix together the bananas, milk, 2 tablespoons rum, lime zest, lime juice, and vanilla extract; stir well. Pour 1/3 of the flour mixture into the butter and mix well. Mix in 1/2 of the mashed bananas. Continue with another 1/3 of the flour, followed by the remaining banana mixture, and finally the remaining flour. Fold in 1/4 cup pecans and 1/4 cup coconut flakes.
  • Pour the mixture into the loaf pans, and bake in the preheated oven until a toothpick inserted into the center comes out clean, about one hour. When finished, cool for 10 minutes in the pan, remove, and finish cooling on a wire rack.
  • After you take the banana bread out of the oven, prepare the topping by stirring together the brown sugar, remaining butter, lime juice, and 2 teaspoons of rum in a small saucepan over medium-high heat. Bring to a simmer stirring constantly; cook until the sugar has dissolved and the mixture is smooth, about one minute. Remove from heat, and stir in 2 tablespoons pecans, and 2 tablespoons coconut. Spoon this topping over the loaves while they are still warm. The topping will harden slightly when the loaf cools.

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.

nonstick cooking spray, for greasing
1 stick unsalted butter
1 cup light brown sugar, plus more as needed
1 large egg
2 cups ripe banana, (about 4 large bananas)
½ cup full fat sour cream
2 teaspoons vanilla extract
1 ½ cups all purpose flour
1 teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ cup dark chocolate chunk
1 tablespoon turbinado sugar

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper, leaving some overhang on the long sides so it will be easy to lift out the bread, and spray again.
  • Add the butter to a medium nonstick pan over medium heat. Cook, stirring occasionally, until the butter turns amber brown and smells nutty, about 3-4 minutes. Watch carefully so the butter does not burn. Remove the pan from the heat and set aside to cool for 10-15 minutes.
  • Add cooled brown butter and brown sugar to a large bowl. Beat with an electric hand mixer on medium speed until evenly combined, about 1 minute. Add the egg and beat until light and fluffy, 3-4 minutes.
  • In a medium bowl, combine the mashed bananas, sour cream, and vanilla and mix with a rubber spatula until well combined.
  • In a separate medium bowl, whisk together the flour, salt, baking soda, and cinnamon.
  • Alternate adding the flour mixture and banana mixture to the butter mixture, starting and ending with flour and folding with a rubber spatula between each addition until just incorporated. Fold in the chocolate chunks.
  • Pour the batter into the prepared loaf pan and smooth with an offset spatula, then sprinkle the turbinado sugar on top.
  • Bake the banana bread until golden brown and a toothpick or cake tester inserted in the center comes out clean, 60-70 minutes. Set the loaf pan on a wire rack to cool for at least 1 hour, then lift out the banana bread and slice.
  • Enjoy!

1 (15 ounce) can baked beans with pork
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam™)
8 slices American cheese
3 tablespoons ketchup
3 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source.
  • Place the bread onto a baking sheet. Spread the baked beans with pork onto each slice of bread, then cut the luncheon meat into 8 slices, and place a slice on each piece of bread. Cover with a slice of cheese, then add a dollop of ketchup and mustard to each. Broil in preheated oven until the edges of the bread have toasted and the cheese is melted and golden.

2 small garlic bulbs
3/4 cup plus 2 tablespoons minced fresh mint, divided
1/2 cup balsamic vinegar
1/4 cup olive oil
2 pounds boneless lamb, cut into 1-inch cubes
Hot cooked rice or pita bread, optional

Steps:

  • Remove papery outer skin from garlic bulbs; cut off tops of bulbs, exposing individual cloves. Peel and halve cloves. In a large dish, combine garlic, 3/4 cup mint, vinegar and olive oil. Add lamb; turn to coat. Cover and refrigerate up to 24 hours., Transfer lamb and marinade to a 3-qt. slow cooker. Cook, covered, on low until meat is tender, 4-5 hours. Sprinkle with remaining mint; if desired, serve with hot cooked rice or pita bread.

  • Preheat oven to 350 (f). Spray a large loaf pan with Pam.
  • Toast nuts gently in a skillet - remove from heat.
  • Cream together the butter & sugars in a mixing bow.
  • In a separate, small bowl, whisk eggs, vanilla, cinnamon, & nutmeg. Add to creamed sugar/butter.
  • In separate bowl, combine flour, baking soda, and salt. Slowly add that to other ingredients.
  • Add bananas & sour cream just until combined.
  • Pour into loaf pan. Bake for ~50-60 minutes. Cool on a rack for 10 minutes, then remove from pan and finish cooling on rack. Warm, with butter is extra nice 8-).
