SAVORY SKILLET BURGERS
A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

Steps:
- Lightly oil a large skillet and put over low heat.
- Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
- Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

HOMEMADE IMPOSSIBLE BURGER
Steps:
- Gather the ingredients.
- Add the sliced mushrooms, olive oil, and salt, and pepper to a large sauté pan over medium high heat. Cook, stirring occasionally, until the mushrooms have browned and softened, 10 to 13 minutes.
- Add the mushrooms to a food processor with the rice, tempeh, oats, beet, nutritional yeast, steak sauce, garlic powder, onion powder, vegetable bouillon, and liquid smoke, if using. Process until completely ground with mostly small pieces. Continue to pulse until there are no large pieces. It should look like ground beef.
- Form the "meat" into four balls and form each of those balls into a patty. Place them on parchment paper.
- Heat a large nonstick skillet on medium-high heat. Add the canola oil. When the oil shimmers, add the patties. Cook for 2 to 3 minutes per side or until golden brown on both sides and heated through. Alternatively, use a griddle pan brushed lightly with the oil.
- Remove the patties from the heat and serve on the buns with lettuce, ketchup, and other favorite toppings.

- Preheat the oven to 350°F (175°C).
- Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.
- Slice the rolls in half lengthwise. Place the bottom half in the same baking dish. Place the cooked beef on the rolls, followed by the onions and cheese. Top with the remaining rolls.
- Brush the tops of the rolls with melted butter and sprinkle the sesame seeds on top. Bake for 20 minutes, or until the bread is golden brown and the cheese is melted.
- Slice into individual sliders, then serve.

- Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute. Repeat with remaining beef., Serve burgers on buns with toppings as desired.

SMASHBURGER-STYLE BURGERS

- Heat a griddle or large cast-iron skillet over medium heat for at least 10 minutes. Meanwhile, combine the mayonnaise, mustard and pickle brine in a small bowl. Combine the onion powder, garlic powder, paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper in a separate small bowl. Set aside.
- Loosely form the beef into 4 balls; set aside. Working in batches, lightly brush the griddle with butter and toast the buns cut-side down until lightly browned, 1 to 2 minutes. Transfer to a plate.
- Brush the griddle with more butter and add 1 ball of beef. Press firmly with 2 large crisscrossed metal spatulas for exactly 10 seconds, then gently remove the spatulas. Sprinkle the patties with some of the seasoning mixture and continue cooking, undisturbed, until well browned, 1 1/2to 2 minutes. (Start cooking another burger at this point.) Flip the patty, sprinkle with more of the seasoning mixture and top with 1 cheese slice. Continue cooking until the cheese is melted around the edges and the bottom of the burger is browned, about 1 more minute. Repeat with the remaining beef.
- Spread the mayonnaise mixture on the bun tops and add some ketchup. Serve the patties on the buns with the pickles, tomato, red onion and lettuce.
SLIPPY BURGERS
I got these crazy, wonderful burgers from My Great Recipes card club collection many years ago. Don't even know if the club is still in existence or not. They were named "Smoky Surprise Burgers" originally. Because they're slippy and slide all over when you cook them my son dubbed them "Slippy Burgers" and that's what we've called them since. Thought it'd be nice to share the recipe now as July 4th. is coming and they're great for an outdoor get together. Add your favorite Tater Salad, Chips, pickles, etc. Anything goes well with these burgers and they're good served any time of the year. ENJOY!

- Mix beef, salt and pepper.
- Divide mixture into quarters, then divide each quarter in 1/2.
- Pat each portion out on wax paper to about 4 1/2" in diameter Combine barbecue sauce, mayonnaise and mustard.
- Spread 4 of the patties with this mixture, dividing evenly among patties.
- Top each of the sauced patties with a slice of Cheddar and a slice of Swiss.
- Cover filled patties with remaining patties-pinch edges to seal.
- Press out any air bubbles.
- Make sure cheese is sealed inside.
- Refrigerate, to grill later or can grill immediately.
- Can be grilled indoors or outdoors, or broiled in conventional stove.
- If broiled, place patties about 6" from heat source and broil approximately 6 to 8 minutes per side.
- If grilled, cook to desired doneness, approximately 8 to 10 minutes per side.
- Place on hamburger buns and serve and enjoy!

- Preheat the oven to 175 degrees F (80 degrees C). Line a baking sheet with parchment paper.
- Cut the crusts off the bread slices. Place slices on the prepared baking sheet.
- Bake in the center of the preheated oven until dry and toasted, about 45 minutes.
- Transfer toasted bread to the bowl of a food processor and pulse until you reach coarse crumbs.
- Place ground chuck, salt, pepper, garlic powder, and onion powder into a bowl. Add bread crumbs. Combine with your fingers, breaking apart the meat.
- Dampen your fingers with water and form mixture into hamburger patties.
- Heat ¼ to ½ inch vegetable oil in a skillet over medium-high heat. Place a patty into the pan and turn heat down to medium. Cook until well browned and crusty, 3 to 4 minutes per side. Repeat with remaining patties, adding more oil if needed.
- Remove from the pan and serve on hamburger buns with mustard and pickles; sprinkle tops of patties with chili powder and/or cayenne if you like prior to serving.

- Preheat a deep fryer with cooking oil to 350 degrees F. You can also use a cast-iron skillet and fill halfway with cooking oil.
- In a large mixing bowl, add the crumbled bread. In a small mixing bowl, combine the salt, pepper and onion powder. Gradually add the seasoning mix to the bread, mixing until evenly distributed. Gradually pour the beef stock over the bread, mixing until the bread is moist and all of the liquid is absorbed. Add the ground beef and knead until thoroughly mixed.
- Take a handful of the mixture and roll it into a ball, then flatten out into patty and place it on a clean surface to flatten out to about a 1/4-inch thick. Repeat with the remaining mixture. Fry the patties until cooked to desired doneness: soft: 1 1/2 minutes, crispy: 2 to 3 minutes, well: 4 minutes and cremated: 5 minutes.
- On each steamed hamburger bun, add a fried patty, some Mustard Mix, chopped onions and Red Pepper Mix for some spice.
