Emily's Famous Sloppy Joes image

This is just a good old-fashioned Sloppy Joe recipe. Just slap some on a bun and enjoy!

1 ½ pounds ground beef
1 onion, chopped
1 red bell pepper, chopped
1 (6 ounce) can tomato paste
1 cup water
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon distilled white vinegar
3 tablespoons brown sugar
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
8 hamburger buns, split

Steps:

  • In a large skillet over medium-high heat, saute the ground beef for 5 minutes. Add the onion and red bell pepper; saute for 5 more minutes, or until onion is tender. Drain the fat.
  • Mix in tomato paste and water, stirring until paste is dissolved. Stir in garlic, chili powder, paprika, cumin, vinegar, brown sugar, oregano, salt and pepper. Continue to heat for 5 to 10 minutes, or until mixture is thick and stewy.

This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

1 8-ounce can tomato sauce
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1 teaspoon prepared yellow mustard
1/2 teaspoon dry mustard
1 teaspoon molasses
1 garlic clove, finely minced
1/4 teaspoon orange zest
Pinch of ground cloves
Hot sauce to taste
1 pound ground beef
1/2 small onion, finely chopped
6 whole-wheat hamburger buns, toasted if desired

Steps:

  • In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
  • Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
  • Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

1 lb ground beef
3 slices bacon (diced)
4 slices American cheese, White
4 potato dinner rolls
1 (12 ounce) can chopped tomatoes (crushed)
1 onion (diced)
salt
1 tablespoon smoked paprika
4 tablespoons olive oil (divided)
chicken stock (optional)

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add ground beef with a pinch of salt and paprika.
  • In a second pan add remaining 2 tablespoons olive oil and bacon. Cook for 1-2 minutes. Add onion to pan and continue cooking. Add tomatoes and simmer for another minute.
  • Transfer onion, tomato and bacon mixture to the browning meat. Stir to combine ingredients. Add cheese and stir to combine and melt. Note: If the meat is too dry you can add a little chicken stock to help moisten it.
  • Serve Sloppy Mikes on potato rolls.

1 teaspoon coriander seeds
1 medium onion, chopped
1 tablespoon vegetable oil
2 cloves garlic, minced
1 pound ground beef or turkey
1 teaspoon ground cumin
Salt and freshly ground black pepper
3 carrots, sliced in 1/4-inch rounds
1 zucchini, halved and cut into 1/4-inch semi circles
1/2 cup chicken stock
2 cobs of corn, kernels removed
1/2 pound kashkaval (or cheddar) grated

Steps:

  • Toast coriander seeds in saute pan. Coarsely chop in coffee mill, pepper mill, or with knife. Saute onions in oil until golden. Add garlic for 1 minute. Saute ground meat until browned. Add cumin and seasoning. Add carrots, for 1 minute. Add zucchini and chicken stock. Cook covered for 2 minutes. Add corn and cook for 1 more minute. Top with kashkaval and cook covered, until melted (or put under broiler). Serve open faced on onion roll, Kaiser roll or burger bun, with plenty of ketchup and maybe a pickle.

1 tablespoon vegetable oil
1 onion, finely chopped
1 pound ground beef
1 clove garlic
1 teaspoon each ground chili powder and cumin
1 cup tomato sauce
1 cup chili sauce
10 ounce package thawed frozen corn kernels
1/2 cup water
Salt and pepper
Toasted hamburger buns, English muffins or egg bread

Steps:

  • Heat vegetable oil in a large skillet. Add onion and saute for 5 minutes or until somewhat tender. Add beef and garlic continue to saute 10 minutes until beef is cooked. Stir in ground chili and cumin, tomato and chili sauces, corn, water and simmer uncovered for 10 minutes. Season with salt and pepper. Spoon over bread of choice.
  • VARIATION FOR ADULTS: Toast bread, top with thin slices of Swiss, Monterey Jack or Cheddar cheese and melt slightly in toaster oven. After hamburger mix is done, separate mixture between two skillets. To adults portion add chopped green chilis or minced fresh jalapeno peppers. Can top with sour cream and slivers of red bell pepper.
