TOASTED PECAN AND HERBED CHEESE BALL BITES



Toasted Pecan and Herbed Cheese Ball Bites image

Provided by Fisher® Nuts

Yield 10 Servings

Number Of Ingredients 9

1½ cup Fisher® Pecan Halves, divided
½ cup chopped parsley, divided
8 ounces of firm cream cheese ( 1 package), room temperature
5.2 ounces "garlic and fines herbs" cheese (1 package)
4 ounces goat cheese (1 log), room temperature
½ teaspoon kosher salt
½ to 1 teaspoon hot sauce
¼ cup finely chopped scallions
¼ cup chopped pimentos, drained and patted dry

Steps:

  • Preheat oven to 350°F. Spread the nuts onto a cookie sheet and bake for 7 to 8 minutes or until the nuts begin to brown and become aromatic. Remove from oven and let cool. Coarsely chop ¼ cup of pecans; set aside. Finely chop the remaining 1¼ cups of pecans and mix with ¼ cup of chopped parsley in a medium bowl; set aside. Line a cookie sheet with plastic wrap.
  • Make the cheese mix: In the bowl of a mixer fitted with the paddle attachment, mix the cream cheese, garlic and fines herbs cheese, goat cheese, salt and hot sauce until smooth. Mix in the remaining ¼ cup parsley, the scallions, pimento peppers and the coarsely chopped pecans. Use a tablespoon measure to transfer tablespoons of the cheese mixture to the prepared cookie sheet to make about 30 mounds. Refrigerate for 15 minutes. Remove the cookie sheet from the refrigerator and roll the mounds into balls. Coat the balls with the reserved pecan and parsley mixture.
  • Refrigerate until ready to use. Serve with crackers, crudités or grilled bread, if desired.

Tastes just like the expensive Boursin® cheese spread you buy at the store. Reduced-fat cream cheese works well in this recipe. Delicious spread on crackers or as a fill on celery sticks. Good shelf life in the refrigerator. This can be eaten right way, but it's best if refrigerated for at least one day before serving.

4 ounces (1 Brick) cream cheese, softened to room temperature
1/4 cup ranch dressing
2 tablespoons fresh dill or thyme
3 to 4 long cucumbers, skinned and sliced into 1 inch slices
15 cherry tomatoes, sliced in half
Salt, to taste
Paprika or cajun spice mix, for garnish

Steps:

  • First, Make the herbed cream cheese: in a stand mixer, mix the softened cream cheese with the ranch dressing and herbs. Mix until well combined. Spoon into a piping bag with a star tip. Prepare the cucumber, remove peel, and using a fork, score the sides. Slice into 1 inch pieces. Using a melon baller, remove a portion of the center of one side of the piece of cucumber, leaving a half moon crater. Pipe the Herb Cream Cheese into the crater. Enough to stick out of the top about 1/2 inch. Add a half Cherry Tomato partially buried into the Herb Cream Cheese Sprinkle additional salt, herbs and spice mix for additional color. Chill in the fridge until ready to serve. Serve chilled and enjoy!

Herbed Goat Cheese Bites image

This was a great way for me to use up the trimmings from my herb garden. The bites kept very well, completely submerged in the evoo for two weeks, so far. Lovely to have on hand, and the olive oil takes on a nice flavor, making it a useful plus for salad dressing, once all the goat cheese is gone.

8 ounces goat cheese
2 ounces room temperature cream cheese
2 tablespoons basil chiffonade
2 tablespoons minced fresh Italian parsley
2 tablespoons minced sun-dried tomatoes packed in oil
1 1/2 teaspoons minced fresh thyme
1 1/2 teaspoons minced fresh oregano
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
extra virgin olive oil, to cover

Steps:

  • Mash together with a fork the goat cheese, cream cheese, herbs, tomatoes, salt and pepper.
  • Chill this mixture in the refrigerator for a while to make it easier to work with.
  • Roll small scoops of the goat cheese mix in your hands to make smooth balls.
  • Put the balls in a clean jar, and completely cover with the evoo. Store in the refrigerator for at least 1 day, to give the flavors time to develop.
  • Serve on a cheese platter, or with baguette, crackers, crudites.
  • The oil makes a wonderful addition to a salad dressing!
