CREAMY SCANDINAVIAN SEAFOOD SOUP



Creamy Scandinavian Seafood Soup image

While other creamy fish soups tend to be overpowering, this one is light, elegant, and delicious. Sprinkle with chives and serve with bread.

2 tablespoons olive oil, or as needed
2 carrots, chopped
2 onions, chopped
2 cups chicken broth
1 cup water
1 cup white wine
¼ cup red wine vinegar
1 tablespoon fish sauce
1 cup heavy whipping cream
1 tablespoon all-purpose flour
1 tablespoon white sugar
2 cloves garlic, minced
1 bay leaf
½ dried chile pepper
½ sprig fennel fronds
¼ teaspoon fine sea salt
¼ teaspoon ground black pepper
1 ½ pounds cod fillets
1 pound mussels, cleaned and debearded
8 uncooked medium shrimp, peeled and deveined, or more to taste

Steps:

  • Heat oil in a pan over medium-high heat. Add carrots and onions and saute until lightly browned, 7 to 10 minutes. Remove from heat and set aside.
  • Bring chicken broth, water, white wine, vinegar, and fish sauce to a boil in a large pot. Add sauteed vegetables, reduce heat, and let simmer for 5 minutes.
  • Whisk heavy cream and flour together in a small bowl. Add cream to the soup, followed by sugar, garlic, bay leaf, chile pepper, fennel greens, sea salt, and pepper. Bring to a boil. Add cod, mussels, and shrimp; bring to a boil. Reduce heat to low and let simmer without boiling until fish is easily flaked, 8 to 10 minutes. Adjust seasoning to taste.

1/3 cup rice
dried herbs (such as a mix of marjoram, parsley, savory)
1/2 cup garden peas (fresh or frozen)
salt & freshly ground black pepper
7 ounces fish fillets, cut into neat strips (any sea fish)
2 tablespoons tomato paste
1 1/2 tablespoons cornstarch
1/2 cup water
generous pinch salt
generous pinch paprika
generous pinch garlic salt
fresh parsley (to garnish)

Steps:

  • In a large saucepan, heat water, rice, dried mixed herbs, peas and salt and pepper to taste to a boil over medium high heat.
  • Reduce heat and simmer for 15 minutes before adding fish.
  • Meanwhile, combine tomato paste, corn starch and water; add to soup and season with salt, paprika, and garlic salt.
  • Let simmer an additional 15 minutes; garnish with fresh parsley.

This soup gets its smooth texture from grated potatoes. You can use any firm white fish, shrimp, or clams.

1 1/2 lbs white flesh fish (cod, perch, walleye, catfish, or you can use shrimp or little neck clams instead)
3 slices bacon, diced
1 tablespoon paprika
6 cups water or 6 cups fish stock
1 teaspoon fresh marjoram
4 medium potatoes, grated
2 skinned tomatoes, chopped
salt
black pepper
3 slices pumpernickel bread, toasted, cubed
1 tablespoon butter

Steps:

  • Cubed fish or shrimp or clams, Set Aside.
  • Fry bacon in large pot until done but not crisp, Add the fish and fry in bacon drippings until lightly colored. Add paprika, mixing well, cover with water or broth. Bring slowly to a boil, reduce heat and simmer, partially covered. Add salt, pepper, marjoram, and the grated potatoes. Cook for 10 minutes.
  • Add the chopped tomatoes and cook another 10 minutes. While cooking, cover slices of pumpernickel with butter, cube them and toast them under the broiler until crisp.
  • Serve soup with croutons.
