SLOW COOKER BEEF STEW WITH FRUIT CHUTNEY



Slow Cooker Beef Stew with Fruit Chutney image

2 tbsp plain flour
Salt and pepper
1.5 kg beef chuck steak, trimmed, cut into 5cm cubes
3 tbsp olive oil
1 large onion, sliced
2 cloves garlic, crushed
1 tbsp fresh thyme leaves
2 tbsp tomato paste
½ cup (125ml) dry red wine
¾ cup (185ml) beef stock
1 bunch baby carrots, washed and trimmed
2 stalks celery, sliced on diagonal into 2cm pieces
1 x 250g jar Rosella Fruit Chutney
⅓ cup chopped parsley
Creamy mash potato and steamed green beans, to serve

Steps:

  • Season flour with salt and pepper and coat the beef cubes
  • Preheat a large frying pan on medium-high heat. Add 2 tbsp oil and brown the beef on all sides, in batches. Transfer to slow cooker
  • In the same pan, heat remaining oil. Add onion, garlic and thyme. Cook, stirring often, over medium heat for 3-4 minutes until onion is tender. Stir in tomato paste. Add red wine. Bring to the boil
  • Transfer onion mixture to the bowl of slow cooker. Add stock, carrots, celery and chutney
  • Cover and cook on HIGH for 4-6 hours, or LOW for 7-8 hours. Top with chopped parsley. Serve with mashed potato and beans

This hearty, spicy beef stew is only for those that can handle the heat. I prefer to make it in the slow cooker, but it can be made stove top also. Great served over mashed potatoes or rice.

1 tablespoon olive oil
1 pound beef stew meat
salt and pepper to taste
2 cloves garlic, minced
1 teaspoon chopped fresh ginger
1 fresh jalapeno peppers, diced
1 tablespoon curry powder
1 (14.5 ounce) can diced tomatoes with juice
1 onion, sliced and quartered
1 cup beef broth

Steps:

  • Heat the olive oil in a skillet over medium heat, and brown the beef on all sides. Remove from skillet, reserving juices, and season with salt and pepper. Cook and stir the garlic, ginger, and jalapeno in the skillet for 2 minutes, until tender, and season with curry powder. Mix in the diced tomatoes and juice.
  • Place the onion in the bottom of a slow cooker, and layer with the browned beef. Scoop the skillet mixture into the slow cooker, and mix in the beef broth.
  • Cover, and cook 6 to 8 hours on Low.

2 pounds beef stew meat, cut into 1-inch pieces
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
