CROCKPOT BRATS AND SAUERKRAUT



Crockpot Brats and Sauerkraut image

Making bratwurst in a crockpot is easy and delicious, especially by making a one pot meal with sauerkraut and beer. Just 10 minutes of prep!

Number Of Ingredients 5

1 package brats (usually comes 5 to a pack)
2 Tbsp butter
2 cups sauerkraut, do not drain
1/2 large onion, sliced
1 bottle of beer

Steps:

  • In a large skillet over medium heat, melt 1 Tbsp of the butter in the pan. Once it's heated, sear the brats until brown for 3 minutes on each side.
  • Add the sauerkraut with it's liquid to the slow cooker. Add the beer, and onions.
  • Place the brats on top and dot with the remaining butter.
  • Press the sausages down into the sauerkraut and liquid to nestle, while they don't need to be fully covered in liquid, having them partially down in the beer and sauerkraut liquid helps to keep them moist.
  • Add the lid and cook on high for 4 hours, or until the internal temperature is 160F+. Brats do well up to 190F.

4 pounds uncooked bratwurst links
3 bottles (12 ounces each) German-style beer or 4-1/2 cups reduced-sodium chicken broth
1 jar (32 ounces) sauerkraut, rinsed and well drained
4 medium Granny Smith apples (about 1-1/4 pounds), cut into wedges
1 medium onion, halved and thinly sliced
1-1/2 teaspoons caraway seeds
1/4 teaspoon pepper

Steps:

  • In batches, in a large nonstick skillet, brown bratwursts over medium-high heat. Transfer to a 7-qt. slow cooker. Add remaining ingredients., Cook, covered, on low 6-8 hours or until a thermometer inserted in sausage reads at least 160°.

6 small red potatoes, quartered
3 medium carrots, cut into 1/4-inch slices
1 medium onion, cut into thin wedges
1 can (14 ounces) sauerkraut, rinsed and well drained
1 tablespoon brown sugar
1 tablespoon spicy brown mustard
1 teaspoon caraway seeds
1 pound smoked kielbasa or Polish sausage, cut into 1-inch slices
2 cans (14-1/2 ounces each) reduced-sodium chicken broth

Steps:

  • In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

  • In a large skillet, cook bratwurst slices over medium-high heat for 3 to 4 minutes or until browned on all sides, stirring frequently. Remove from skillet and set aside. This is my version of Brats and Sauerkraut. The slow cooker makes it very easy to throw together on the morning and then get all my errands done on a weekend day without having to worry about making time to cook a delicious dinner for the family. All the ingredients could be prepped the night before to make it even easier to throw it together in the morning. I used 2 slices of green pepper, 2 slices of red bell pepper and 2 slices of yellow bell pepper rather than using all one color because I had them on hand after having leftover toppings from homemade pizza night, and I thought the different colors would give the meal more visual appeal. I used to hate sauerkraut as a kid, but my mother never rinsed it, which made it taste very sour. I find that rinsing the kraut takes away some of the sourness but still leaves a lot flavor. Italian sausage can be substituted for the brats.
