I came up with this one Thanksgiving because I was short on oven space. Everyone loved it and I have made it for every Thanksgiving and holiday meal ever since. Be careful not to overcook marshmallows, they can become liquified.

2 (29 ounce) cans sweet potatoes, drained
⅓ cup butter, cut into 1/4-inch pieces
¾ cup light brown sugar
1 (16 ounce) package miniature marshmallows

Steps:

  • Spray the inside of a slow cooker with cooking spray.
  • Place sweet potatoes in a slow cooker and arrange butter on top of sweet potatoes. Sprinkle brown sugar over sweet potatoes.
  • Cook on High, 3 to 3 1/2 hours. Add marshmallows and cook until soft and somewhat puffy, about 15 minutes.

With just the right amount of sweetness and spice, these sweet potatoes are cooked on the stovetop until they are tender, freeing up valuable oven space at your holiday meal.

4 pounds sweet potatoes (about 8 medium), peeled
6 tablespoons unsalted butter
1/2 cup firmly-packed dark brown sugar
1/3 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt, plus more to taste
1/4 cup pecans

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
  • Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until dark brown with a light scent of roasted nuts, about 8 minutes. Season the pecans with some salt while warm, let them cool completely and coarsely chop.
  • Transfer the potatoes with their sauce to a large serving platter and sprinkle the pecans over the top.

1/3 cup packed brown sugar
3 tablespoons butter
3 tablespoons water
1/2 teaspoon salt

Steps:

  • Scrub sweet potatoes, but do not peel. Place potatoes in 3-quart saucepan. Add enough water just to cover. Heat to boiling; reduce heat to low. Cover and simmer 20 to 25 minutes or until tender. Drain; cool slightly. Slip off skins. Cut into 1/2-inch slices.
  • Heat remaining ingredients in 10-inch skillet over medium heat, stirring constantly, until smooth and bubbly. Add potatoes. Gently stir until glazed and hot.

Slow Cooker Sweet Potatoes are so simple and delicious. Throw them in the crock pot in the morning and let them slowly cook all day long while you prepare your other dishes.

6 sweet potatoes (peeled and sliced )
½ cup orange juice
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon salt
¾ cup brown sugar
2 cups mini marshmallows

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Spread chopped sweet potatoes in the bottom of the slow cooker.
  • In a medium mixing bowl, combine orange juice, vanilla, cinnamon, nutmeg, salt and brown sugar.
  • Pour over the top of the sweet potatoes and place lid on the slow cooker.
  • Cook on low for 4-6 hours or high for 2-3.
  • Once cooked, pour all the contents from your slow cooker into a baking dish.
  • Top with marshmallows and broil in oven until marshmallows are golden brown (mine took about 45 seconds!).

4 pounds sweet potatoes, quartered
1 ¼ cups margarine
1 ¼ cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
  • In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
  • Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.
  • Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

  • Sprinkle the sweet potatoes with brown sugar, salt, pepper, nutmeg and cinnamon. Cut the butter into 20 small pieces and place evenly on top of the sweet potatoes.
  • Cover the slow cooker and cook on HIGH for about 3 hours (each slow cooker cooks differently, my slow cooker cooked them in exactly 3 hours), or you can cook on LOW for 5-6 hours. Test the sweet potatoes for doneness. Keep the sweet potatoes in the slow cooker on the WARM setting until you’re ready to serve. When ready to eat, go to the next step.
  • Transfer the sweet potatoes to an oven safe dish. Top the sweet potatoes with the marshmallows and put under the broiler in your oven for 2-3 minutes until marshmallows are brown and puffy. WATCH the oven closely so that the marshmallows don’t burn.
