This is a yummy side dish that we always have on Thanksgiving but it's great in the summer as well. The mixture will be soupy; it's supposed to be that way.

Steps:
- Place the cucumber slices in a container and cover with cold water. Refrigerate 4 hours to overnight.
- Whisk the sour cream, vinegar, sugar, and salt in a mixing bowl until the sugar has dissolved. Drain the cucumbers and squeeze out the excess water; add to the bowl and mix to coat with dressing.

CUCUMBER SOUR CREAM MOLD
You know it's a party when a fancy-looking sour cream mold is on the table! This one is gloriously green, made with cucumbers, lime JELL-O and dill.

Steps:
- Stir boiling water into dry gelatin and salt in large bowl at least 2 minutes until completely dissolved. Add cold water and lemon juice; stir. Refrigerate 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
- Mix sour cream and dressing until well blended. Stir into thickened gelatin. Refrigerate about 15 minutes or until thickened (spoon drawn through leaves definite impression). Stir in cucumber, onion and dill weed. Pour into 5-cup mold sprayed with cooking spray.
- Refrigerate 4 hours or until firm. Unmold. Garnish as desired. Store leftover gelatin mold in refrigerator.

- Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
- When the gelatin has thickened, stir in the mayonnaise, and fold in the drained cucumber. Transfer to a mold or serving bowl, and chill for 3 hours, or until set.

- Put cucumbers in a large, glass baking dish. Sprinkle 1/8 cup salt on the cucumbers, mixing well.
- Chill the cucumbers in the refrigerator.
- In a large mixing bowl, combine sour cream, lemon juice, scallions, sugar, pepper, and remaining salt.
- Refrigerate at least 2 hours.

TROUT WITH CUCUMBER AND SOUR CREAM

- Preheat oven to 375°F. Combine cucumber, 1 1/2 teaspoons dill and 1 1/2 teaspoons lemon juice in medium bowl. Season with salt and pepper. Toss to coat. Combine sour cream, lemon peel and remaining 1 teaspoon lemon juice in small bowl; season with salt and pepper and stir to blend.
- Brush baking sheet with some of melted butter. Arrange trout fillets, skin side down, on prepared sheet. Brush with remaining butter. Sprinkle trout with salt and pepper. Bake until just opaque in center, about 10 minutes.

Add dissolved gelatin, vinegar and salt blend or process until smooth. Pour into a bowl fold in cucumber, celery and onion. Pour into a lightly-oiled 4-cup mold or individual molds. Refrigerate 3 hours or until firm. Unmold on greens top with sour cream and sprinkle with almonds.
