Mexican coffee is almost the same as Irish coffee, except it uses Mexican liqueurs.

1 sugar cube
1 fluid ounce hot water
¾ cup coffee
1 fluid ounce coffee-flavored liqueur
1 tablespoon whipped cream

Steps:

  • Pour sugar and hot water into a coffee mug. Stir in the coffee and liqueur, and then spoon whipped cream gently on top of the coffee.

This Mexican Cheese Ball is great for holiday get-togethers and can easily be made ahead of time!

2 (8-oz) packages cream cheese, softened
1 cup shredded Mexican cheese blend
1 (4-oz) can of Old El Paso™ diced green chiles, drained
1 (1-oz) package Old El Paso™ taco seasoning mix
1/4 cup sliced green onions (about 2 green onions)
1 teaspoon lime juice
1 cup crushed tortilla chips (about 3 cups whole)
Tortillas chips and sliced red and green bell pepper for serving

Steps:

  • In a food processor, add the cream cheese, shredded cheese, diced green chilies, taco seasoning, green onions, and lime juice. Pulse well until ingredients are completely combined.
  • Line a bowl with plastic wrap. Spoon the mixture on top of the plastic wrap and wrap completely forming a ball.
  • Chill in the fridge (or the freezer for faster chilling) for at least an hour until ball is firm.
  • In a food processor, crush chips until fine.
  • Unroll ball from plastic wrap and roll in the crushed chips. Cut slices with a knife and serve with chips and bell peppers.

From the Fabulous Foods website. I can't wait to make these this holiday season. A change from the normal bourbon balls. These will become more flavorful after sitting for 2-3 days, so plan ahead or make sure you put some aside for yourself to enjoy later. Time is a guess because I have not made these yet.

3 1/2 cups vanilla wafer crumbs
1 cup pecans, finely chopped
1 1/2 cups confectioners' sugar, sifted and divided
3 tablespoons instant coffee granules
1/3 cup Irish whiskey
1/3 cup light corn syrup

Steps:

  • In a large bowl, combine the cookie crumbs, pecans and 1 cup of sugar.
  • Dissolve coffee granules in the Irish Whiskey in a small cup.
  • Add the coffee/whiskey mixture and the corn syrup to the dry ingredients, mixing until blended.
  • Shape mixture into 1-inch balls and roll in the remaining 1/2 cup of sugar.
  • Store in an air tight container.

1/2 lb ground blanched almond
1/3 cup unsweetened cocoa powder
1/4 cup white sugar
2 tablespoons instant coffee
1/3 cup coffee liqueur
1/2 cup light corn syrup
cinnamon sugar, for rolling

Steps:

  • Crush chocolate wafers into crumbs.
  • Mix with ground blanched almonds, unsweetened cocoa powder, and sugar.
  • Dissolve instant coffee in coffee liqueur and stir into crumb mixture with the light corn syrup.
  • Shape into small balls and roll in cinnamon sugar.
  • Store in refrigerator.
