GROWN UP HAM AND CHEESE FINGER SANDWICHES

Steps:
- Preheat the oven to 400 degrees F.
- Bring water, vinegar and brown sugar to a boil. Add the onions and remove from the heat. Cover, and set aside until the onions come to room temperature.
- Trim the crusts off the bread and cut the bread into thirds, for 3 rectangles per piece. Lightly brush both sides of the bread pieces with olive oil and lay out on a baking sheet. Toast in the oven until just crisp and lightly brown, about 5 minutes. Cool.
- To assemble: Quarter, core, and very thinly slice the apple, (a mandolin is terrific for this). Very thinly slice the cheese into triangles or shards that will fit nicely on the bread.
- Place a dab or smear of mustard on the bread. Place a piece of apple, cheese and 1 or 2 sprigs of watercress on each piece of toasted bread. Wrap a small piece of prosciutto around each stack to make a neat package. Top with a little bit of the pickled onions, a drizzle of olive oil and freshly cracked black pepper. Serve at room temperature.

- Combine butter, mustard, onions, poppy seeds and dill seed. Spread insides of buns with this mixture. Place a slice of cheese and a slice of ham inside each bun.

- Place two slices of bread in a greased 11x7-in. baking dish or two individual baking dishes. Top each with a slice of ham and cheese; top with remaining bread. , In a small bowl, beat the eggs, milk, mustard and parsley. Pour over sandwiches. Let stand for 5 minutes; carefully turn sandwiches over and let stand 5 minutes longer. , Bake, uncovered, at 350° for 30-35 minutes. Top with asparagus and cheese if desired. Bake 5 minutes more or until cheese is melted and a knife inserted into the egg mixture comes out clean. Serve immediately.

- Spread one side of 10 slices of bread with a thin layer of butter. Top each with a few slices of ham, and a slice of cheese. Using a 1-inch round biscuit cutter, cut a hole in the center of the remaining 10 slices of bread. Center the bread with the holes, over the ham and cheese. Using a 2 1/2-to-3-inch flower cookie cutter, cut out sandwiches, avoiding the crusts.
- Fill the center hole with either, half a cherry tomato or an olive. If not serving immediately, cover with a damp paper towel or plastic wrap and refrigerate until ready to serve.
SASSY HAM AND CHEESE SANDWICHES

- Preheat the oven to 350 degrees F.
- In a small bowl, combine the cream cheese, chives and thyme. Mix until well combined and set aside.
- In a separate bowl, mix together the butter, onions, Parmesan and Worcestershire sauce. Set aside in a warm spot to keep the butter from solidifying.
- Cut all 12 rolls in half. Place the roll bottoms in a 9- by 13-inch pan. Place equal amounts of ham (about 3 slices) on each roll. Top with the gruyere. Spread a generous amount of the chive and cream cheese on the roll tops. Place the tops on top of each sandwich bottom.
- Pour the butter mixture over the top of the sandwiches. Cover with foil and bake until the cheese is melted, about 20 minutes. Then remove the foil and bake an additional 5 minutes to toast the buns.

- Heat oven to 375°F; spray cookie sheet with cooking spray.
- In medium bowl, stir Bisquick mix and boiling water with spoon until dough forms. Divide dough into fourths. On surface sprinkled with Bisquick mix, roll dough in Bisquick mix to coat. Press each piece into 6-inch square, 1/4 inch thick.
- Spread 1/2 teaspoon of the mustard on each dough square to within 1/2 inch of edges. Top with ham and cheese to within 1/2 inch of edges. Fold each square diagonally in half. Press edges with fork to seal. Place on cookie sheet.
- In small bowl, beat egg and water. Brush over sandwiches. Bake 20 to 25 minutes or until crust is golden brown.
- To Freeze and Bake: Place unbaked sandwiches without egg wash on ungreased cookie sheet. Freeze uncovered 2 to 3 hours or until solid. Arrange in single layer in container to prevent breaking; seal well. Freeze up to 2 months. To bake, place on greased cookie sheet and brush with egg-water mixture. Bake at 350°F 25 to 30 minutes or until crust is golden brown.
