2 tbsp. freshly chopped herbs (parsley, basil, rosemary, or thyme), plus more for garnish
1 clove garlic, minced
2 lb. sirloin steak, 1 1/2" thick
kosher salt
Freshly ground black pepper
1/4 c. extra-virgin olive oil
2 tbsp. red wine vinegar
6 c. mixed baby greens

Steps:

  • In a small bowl, mix together Country Crock Original, herbs, and garlic. Set aside.
  • Heat a grill pan or grill over high heat. Season steaks with salt and pepper and grill 7 to 8 minutes per side for medium-rare, or a few minutes longer for medium. Remove from grill and let sit 5 minutes.
  • In a large bowl, whisk together olive oil and red wine vinegar. Add mixed greens, tossing gently to combine, and season with salt and pepper.
  • Serve steaks with a dollop of herb-garlic spread and mixed greens.

3 tablespoons mixed chopped herbs, such as rosemary, thyme, oregano, or marjoram
1 1/2 teaspoons coarse salt
1 teaspoon freshly ground black pepper
1 tablespoon olive oil
1 grass-fed top sirloin steak (20 ounces and 1 1/2 inches thick), trimmed leaving 1/4 inch of fat

Steps:

  • In a small bowl, mix together herbs, salt, and pepper. Rub herb mixture onto steak and place in a shallow dish. Drizzle steak with olive oil and let stand at room temperature for 1 hour.
  • Preheat, clean, and oil a grill or grill pan over high heat. Place steak on grill pan and cook 3 minutes. Rotate steak 110 degrees to make crosshatching grill marks, if desired, and continue cooking an additional 2 to 3 minutes. Turn and continue cooking 2 to 5 minutes more for a rare steak and 4 to 7 minutes for medium-rare.
  • Transfer steak to a cutting board and let stand 5 minutes before slicing and serving.

1 1 ½-pound sirloin steak ((be sure the steak is roughly 1 ½-inches thick))
1 tablespoon extra virgin olive oil
2 tablespoons beef rub
1 1/2 tablespoons herb compound butter

Steps:

  • Prepare Grill: Prepare your grill for two-zone grilling targeting 450 - 500 degrees in the cooking chamber.
  • Season Steak: Coat the steak in olive oil and then liberally season with the beef rub.
  • Grill Steak: When the grill is at the right temperature, place the sirloin steak over the direct side of the heat and grill for 5 minutes, with the lid closed, or until you see a crust form.
  • Flip: Flip the steaks and continue grilling on direct for 4-5 minutes with the lids closed (until a nice crust forms on the other side), and then move the steak to the indirect side.
  • Finish: Finish the steak on indirect side until the internal temperature of the steak reaches 125 degrees Fahrenheit for a rare steak (about 8 minutes, but be sure to check temperature, not rely on exact time).
  • Rest, Slice, Serve: Let the steak rest for 10 minutes and then slice and serve with your favorite toppings and sides. The resting period allows carry over cooking to occur, and the internal temperature of the steak will rise another 3 - 5 degrees. It also allows all the heated cells to start to calm down and reabsorb some of that liquid from the high heat cooking process.

2 tablespoons olive oil
2 sirloin steaks, each about 1 1/2 pounds (thick-cut, bone-in top sirloin)

4 shallots, finely chopped
1/4 cup beef stock
2 tablespoons green mustard, with herbs or 2 tablespoons Dijon mustard
3 tablespoons chopped mixed fresh flat-leaf parsley, chervil, and tarragon

Steps:

  • In a cast-iron frying pan over high heat, melt the butter with the olive oil until the mixture turns a light brown.
  • Add the steaks and sear well, about 1 minute.
  • Turn, sprinkle with sea salt, and brown on the second side for 1 minute more.
  • Turn again, reduce the heat slightly, and cook, turning once, for about 6 minutes on each side for rare, or until done to your liking.
  • Transfer to a platter, tent with aluminum foil, and let rest for 5 to 8 minutes before carving.
  • Meanwhile, make the sauce: In a saucepan over medium heat, melt 2 tablespoons of the butter.
  • Add the shallots and saute until softened but not colored, about 30 seconds.

  • Stir in any juice that has collected on the platter holding the beef.

  • Cut along the bone to free the meat then carve in slices diagonally across the grain. Pass the sauce at the table.

This brilliant grilling method combines the low and slow cooking of traditional barbecue with the high heat charring practiced at steakhouses. Though it works well with any thick steak, from picanha to porterhouse, this recipe calls for a cut of steak popularized in Santa Maria, Calif., and is today known and loved across the U.S. as tri-tip. As the name suggests, it's a triangular or boomerang-shaped steak cut from the tip of the sirloin, blessed with a robust beefy flavor.

1 large or 2 small wood chunks (such as oak, hickory or mesquite) or 1 1/2 cups wood chips
Canola oil, for greasing the grill grate
1 tri-tip steak (about 2 to 2 1/4 pounds; see Tip)
Coarse kosher or sea salt
Freshly ground black pepper
Granulated onion or garlic (or both)

Steps:

  • If using wood chips, soak in water for 30 minutes. Set up your grill for indirect grilling and heat to 250 degrees. Clean and oil the grill grate.
  • Remove the tri-tip from the refrigerator. Generously season it with salt, pepper and granulated onion or garlic (or both) on all sides.
  • Place the tri-tip, fat side up, on the grill grate away from the heat. Insert a remote thermometer probe, if using, deep into the center of the meat. If you soaked wood chips, drain them. If using a charcoal grill, add the wood chunk(s) or chips to the coals. If using a gas grill, place the wood chunks under the grate over one of the burners, or place the chips in your grill's smoker box. Close the lid. Indirect grill the tri-tip to obtain an internal temperature of 110 degrees, which will take 30 minutes or so. Transfer the tri-tip to a platter and let it rest for at least 10 minutes, or as long as 1 hour.
  • Just before serving, heat your grill to high. On a charcoal grill, rake the coals into a mound in the center of the grill, adding fresh coals as needed. Let the new coals burn until glowing red. On a gas grill, simply set the burners on high.
  • Return the tri-tip to the grate directly over the heat, fat side up, and reinsert the thermometer probe, if using. Direct grill until the top and bottom are sizzling, crusty and dark, and the internal temperature is 125 degrees for rare or 135 degrees for medium-rare, 3 to 6 minutes per side, turning with tongs.
  • Transfer the tri-tip to a cutting board and thinly slice across the grain. (You do not need to rest the meat a second time.) Take time to notice the even color and doneness of the meat and to appreciate the intoxicating aroma of the wood smoke. Serve at once, while the steak is still hot.
