1 tablespoon olive oil
1 large onion, diced
3 large cloves garlic, minced
2 lbs ground turkey (chicken or beef)
5 cups chicken broth
2 (15.5 oz) cans white beans, drained and rinsed (like great northern or cannellini)
2 cups frozen corn
3 tablespoons hot sauce
3 tablespoons chili powder
1 1/2 tablespoons seasoned salt
1 tablespoon black pepper
½ teaspoon cumin
½ teaspoon cayenne pepper, optional
1 cup salsa verde
1 can (14.5 oz) diced tomatoes, do not drain
2 tablespoons cornstarch
shredded cheese
sour cream
cilantro
avocado

Steps:

  • 1. In a large skillet over medium high heat, add olive oil, ground turkey and onion. Brown turkey until meat is no longer pink and onion is translucent. Add garlic and sauté for minute. Transfer meat mixture to slow cooker. 2. Add all remaining ingredients (except corn starch) to your slow cooker. Stir to combine. Set the heat to high for 3-4 hours or low for 6-8 hours. 3. Make a slurry: place cornstarch in a bowl. Add 2 tablespoons of broth from the slow cooker into the cornstarch and stir. Continue adding broth 1 tablespoon at a time until you reach 4 tablespoons total of broth added. Stir the slurry into the soup, this will help to thicken the soup. Allow soup to rest for 10 minutes and then serve warm. 4. You can keep it warm for hours in the slow cooker or store any leftovers in an airtight container in the fridge.

1 lb ground beef
3/4 cup onion, diced
1/4 cup all purpose flour
4 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon ground pepper
1 30 oz can pinto beans
4 oz can diced green chilies
1 cup salsa
1 10 oz can red enchilada sauce
6 cups chicken broth
4 oz cream cheese, softened & cubed
1 cup sharp cheddar cheese, shredded
1 cup pepepr jack cheese, shredded

Steps:

  • Brown ground beef and onion until fully cooked, drain grease. Add into slow cooker: cooked ground beef and onions. Sprinkle flour over top and stir in. Add to mixture: garlic, spices and seasonings, beans, green chilies, salsa, enchilada sauce and chicken broth. Stir to combine. Cover and cook on high 4 hours or low for 6 hours. Just prior to serving, stir in cheeses. Serve when they are completely melted in. Serve with toppings of choice.

1.5 lb turkey breast tenderloin
2 tbsp taco seasoning
1 cup onion (diced)
1 cup green bell pepper (diced)
20 oz diced tomatoes with green chilies
2 cups chicken broth
8 oz cream cheese (cubed)
2 cups cheddar cheese (shredded)
1 cup tortilla strips
¼ cup fresh cilantro leaves (chopped)
1 avocado (diced)

Steps:

  • Rub the turkey breast tenderloin with the taco seasoning.
  • Place in a large slow cooker with the onion and bell pepper.
  • Add the diced tomatoes with green chilies, chicken broth and cream cheese to the slow cooker.
  • Cover and cook on low for 6-8 hours, or on high 3-4 hours.
  • Shred the turkey, either by removing it from the slow cooker first, or simply shredding it in the slow cooker.
  • Add the shredded turkey back to the slow cooker with the cheddar cheese.
  • Stir to combine.
  • Allow the cheddar cheese to melt in for 5-10 minutes.
  • Top with the optional toppings of your choice such as tortilla strips and fresh cilantro.

1 small onion, chopped

1 celery rib, chopped

15 ounces beef broth
14 ounces canned black beans (drained and rinsed)
14 ounces canned corn (undrained)
28 ounces canned petite diced tomatoes (undrained)
4 ounces green chilies (undrained)
1 ounce taco seasoning ((1 packet))

Steps:

  • In a large stock pot, brown ground beef over medium heat with onion until beef is fully cooked. Drain and rinse, if desired.
  • Place pot back on stove top over medium heat. Add in Velveeta cheese on top of the cooked beef.
  • Pour in beef broth, black beans, corn, tomatoes, chilies, and taco seasoning.
  • Mix together and heat until Velveeta is melted and soup is smooth.
  • Serve topped with your favorite taco toppings (sour cream, guacamole, pico de gallo, shredded cheese, etc).
