SLOW COOKED CHICKEN AND DUMPLINGS
Steps:
- Spray the crock of a 6 quart oval your slow cooker or similar with cooking spray. Set on the low setting.
- Cut the chicken breasts once through the middle, then into large chunks and arrange in the bottom of the slow cooker.
- In a mixing bowl, whisk together the soups, broth, melted butter, onion and seasonings. Pour over chicken. Cover and cook on low for 5 hours.
- After 5 hours, uncover, stir well and increase the temperature to the high setting.
- Cut thawed biscuits into quarters then drop them into the slow cooker. Stir into the broth.
- Replace lid and lock to seal. Cook for an additional 1-1 1/2 hours.
- Uncover let stand for 10 minutes, then serve.

EASY SLOW COOKER CHICKEN AND DUMPLINGS

Steps:
- Add chicken, carrots, celery, onions, thyme, and black pepper to your slow cooker.
- Add the cream of chicken soup, cream of celery soup, chicken broth and water. Stir.
- Cook on HIGH For 4 hours or LOW for 8 hours.
- Add peas at this point if you would like. Stir.
- I only use 7 biscuits for this recipe. Cut the biscuits into quarters. Arrange the biscuit quarters evenly over the soup.
- Sprinkle dumplings with a touch of thyme and pepper. Replace the lid.
- Turn your slow cooker to HIGH.
- Cover and cook on HIGH for 45 minutes (DO NOT OPEN THE LID DURING THIS TIME). You will know the dumplings are done when they are no longer shiny.NOTE- If your slow cooker has switched over to warm after cooking for a length of time you will need to cook the dumplings for 1.5 hours so the slow cooker gets back up to temperature.

- Place carrots and celery in the bottom of your slow cooker. Layer the chicken breasts on top. Salt and pepper to taste and dot with the butter. In a large bowl, mix the soups, stock and oregano. Pour this mixture over the chicken in the slow cooker. Cover and cook on high for 3 to 5 hours, or until the chicken is done. Remove the chicken and shred. Prepare the dumplings per the directions on the package, reserve some of the water. Add the cooked dumplings to the slow cooker, add some of the dumpling water, if needed. Add the shredded chicken and cook for 1 to 2 hours on low. Serve Hot. OPTION: Cook in large stock pot. You can simmer the soup for a shorter time. Be careful not to burn, scorch or let the soup dry out.
