Slow Cooker Size:
4 bone-in chicken thighs
cooking oil
1 1/2 lbs Yukon gold potatoes, diced
1 pound green beans, ends snipped
2 garlic cloves, minced
1 (8-ounce) can tomato sauce (not paste)
1 1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried thyme Coupons
1/2 teaspoon dried rosemary
6-quart or larger

Steps:

  • Set a pan on the stove top and set to medium high heat. Add enough cooking oil to coat the bottom of the pan. When the oil is hot, brown the chicken on both sides, you don't need to cook the meat through. Add the diced potatoes and green beans to the bottom of the slow cooker, toss them together to combine them. Add the chicken thighs on top of the potatoes and green beans. Add the garlic. Drizzle over the tomato sauce, then sprinkle over the salt, pepper, thyme and rosemary. Take a spatula and smear around the sauce trying to combine the seasoning into the sauce. Cover and cook on HIGH for 4 1/2 hours. Do no open the lid during the cooking time or the potatoes will not get tender. Serve and enjoy! 3 pounds skinless, boneless chicken breast halves
2 (14 ounce) cans coconut milk
2 onions, diced
4 tablespoons tomato paste
4 tablespoons minced fresh garlic
4 tablespoons minced fresh ginger
1 tablespoon ground cumin
1 tablespoon ground turmeric
1 tablespoon garam masala
1 tablespoon ground coriander
1 tablespoon curry powder
4 bay leaves
1 cinnamon stick
salt and ground black pepper to taste

Steps:

  • Add chicken, coconut milk, onions, tomato paste, garlic, ginger, cumin, turmeric, garam masala, coriander, curry powder, bay leaves, cinnamon stick, salt, and pepper to a slow cooker.
  • Cook on High until chicken is no longer pink in the center and the juices run clear, 2 to 3 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove and discard the bay leaves and cinnamon stick. Shred the chicken.

  • In a separate bowl combine all of the ingredients for the rub with the oil, then smear all over the chicken. Place the chicken in the slow cooker on top of the vegetables and press the remaining two cloves of garlic in between the breast and the legs.
  • Pour the chicken stock into the slow cooker, taking care not to wash the rub off of the chicken. Use enough stock to just cover the chicken wings (see the picture for reference).
  • Cook on low for 2 to 3 hours. The chicken is cooked when the juices run clear, and the leg pulls away easily from the body. We recommend using a meat thermometer, see the recipe notes for more info.
