SLOW-COOKER BOURBON CHICKEN

- Spray 3 1/2- to 4-quart slow cooker with cooking spray. In slow cooker, mix bourbon, soy sauce, honey, vinegar, ketchup, onion, garlic and gingerroot. Add chicken.
- Cover; cook on Low heat setting 6 to 8 hours. Remove chicken from slow cooker to plate; shred with 2 forks or break into bite-size pieces with spoon. Return chicken to slow cooker.
- Cook rice in water as directed on package.
- Serve chicken over rice; sprinkle with green onions.

- Place chicken in 6-quart slow cooker. Pour marinade over chicken; turn to coat. Cover.
- Cook 2 1/2 hours on HIGH or 5 hours on LOW or until meat is tender. Remove chicken from slow cooker and place in large bowl, reserving cooking liquid in slow cooker.
- Shred chicken using 2 forks. Mix 1/2 cup reserved cooking liquid and remaining 1 tablespoon marinade in small bowl. Pour over shredded chicken; toss gently to coat. Serve on sandwich or slider rolls, or use for tacos.

- Heat the slow cooker to low and heat 1 tbsp oil in a pan. Brown the chicken in batches, transferring it to the slow cooker as you go. Add the remaining oil to the pan and fry the onions for 5 mins, or until just softened, then stir in the garlic and paprika and cook for another minute. Tip into the slow cooker, then swirl 100ml water around the pan and pour this in as well.
- Add the chipotle, passata, barbecue sauce, sugar and lime juice, then season and stir. Cover and cook for 6-8 hrs until the chicken is really tender. Using two forks, shred the chicken through the sauce. Serve in buns, taco shells, jacket potatoes or over rice, with coriander leaves, chillies and guacamole, if you like.

- Optional: marinate the chicken thighs by placing them in a shallow baking dish. In a small bowl, stir together the soy sauce, apple cider vinegar, bourbon, brown sugar, maple syrup, garlic, ginger, and black pepper. Pour over the chicken. Cover the dish tightly and refrigerate for as long as time allows (a few hours or overnight).
- Lightly coat a 4-to-6-quart crock pot with cooking spray and arrange the chicken thighs in the bottom of the slow cooker. Pour the sauce (marinade) over the top, cover the crock pot, and cook on low for 6-7 hours or on high for 2 1/2 - 3 hours, until tender and cooked through.
- Remove the chicken from the crock pot to a serving plate and cover to keep warm. Strain the cooking liquid into a small sauce pan and place on the stove.
- In a small bowl, whisk together the cornstarch with 2 tablespoons water to create a slurry. Heat the saucepan on medium high, then whisk the slurry into the cooking liquid until evenly combined. Cook, stirring constantly, until the sauce bubbles. Continue cooking and stirring until glossy and thickened, 1-2 minutes. Remove from heat. Pour the sauce over the chicken, then sprinkle with green onions. Serve warm with rice.

- Combine all ingredients except chicken in your slow cooker. Mix well. Add the chicken breasts, turning so they are coated with the sauce.
- Cover and cook on low for 8 hours. Use the back of a wooden spoon to gently shred the chicken. Stir so that they shredded chicken is evenly coated with the sauce. Set slow cooker to warm and let chicken stand for 15 minutes to soak up the sauce.
- While the chicken is resting, melt the butter in a large saute pan set over medium heat. Add the sandwich rolls, cut side down, and cook until lightly toasted – about 3 minutes.
