I like to make this slow cooker peach crisp when the summer days are hot and I don't want to start the oven.

nonstick cooking spray
½ cup all-purpose flour
½ cup uncooked old-fashioned oats
⅓ cup butter, softened
⅓ cup brown sugar
⅓ cup white sugar
1 teaspoon ground cinnamon
4 cups sliced peaches

Steps:

  • Lightly spray the inside of a slow cooker with cooking spray.
  • Mix flour, oats, butter, brown sugar, white sugar, and cinnamon together in a large bowl.
  • Layer peaches in the bottom of the prepared slow cooker. Sprinkle the flour mixture over the peaches.
  • Cover and cook on Low until peaches are bubbly, 4 to 6 hours.

1 1/2 cups steel-cut oats
1/2 cup unsweetened coconut flakes
6 cups unsweetened coconut milk (from the carton)
6 large peaches, chopped
1/2 tsp cinnamon
1/4 cup coconut sugar (or brown sugar)
1 can coconut cream*

Steps:

  • Spray or grease slow cooker with coconut oil.
  • Add all ingredients to your slow cooker. Stir.
  • Cook on low for 8 hours or high for 4 hours.**
  • Give it a good stir for about 5 minutes or until ingredients come together and thicken (be patient, this may take a few minutes)
  • Place desired serving in a bowl and top with a scoop of coconut cream to serve.
  • Store leftovers in fridge for up to 1 week.
  • To reheat add a splash of coconut milk and heat up in microwave.

2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon ground cinnamon

1 large egg, room temperature
1/4 cup 2% milk, warmed

6 cups sliced peeled fresh peaches (about 6 large)
2 tablespoons brown sugar
