PORK CHOPS WITH APPLES, SWEET POTATOES, AND SAUERKRAUT



Pork Chops with Apples, Sweet Potatoes, and Sauerkraut image

This sweet yet savory medley of apples, sweet potatoes, onions, and sauerkraut cooks up perfectly in the slow cooker! Don't be afraid of the sauerkraut---it becomes sweet and mild.

4 (1 inch thick) boneless pork chops
2 medium sweet potatoes, peeled and sliced 1/2 inch thick
1 medium onion, sliced
2 apples - peeled, cored and sliced
1 tablespoon brown sugar
½ teaspoon ground nutmeg
¼ teaspoon salt
freshly ground black pepper to taste
1 (16 ounce) can sauerkraut, drained

Steps:

  • Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
  • Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
  • Serve pork and vegetables with juice from the slow cooker spooned over them.

The apple and onion together work magic on this classic dish. This is traditionally served on New Year's Day in Central Pennsylvania. It is customarily served with mashed potatoes. The sauerkraut mixture tops the mashed potatoes like a gravy. Surprisingly good.

6 thick-cut pork chops
4 tart apples, peeled and sliced
1 large onion, sliced
water to cover
1 quart sauerkraut
½ teaspoon fennel seed, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Brown pork chops in hot skillet, 2 to 3 minutes per side. Drain.
  • Arrange apples and onion in the bottom of a slow cooker; top with browned pork chops. Pour in enough water to cover bottom of the slow cooker crock.
  • Cook on High for 3 hours (or on Low for 6 hours). Add sauerkraut and fennel seed to pork chop mixture. Cook for 1 more hour.

Make the perfect pork chops with just 10 minutes prep time with these easy slow cooker pork chops. Seasoned with French's Classic Yellow Mustard, dark brown sugar, dried thyme leaves, sweet onions, salt and pepper, the flavor of these slow cooker pork chops is enhanced by sweet apple juices and tart sauerkraut. Just throw all the ingredients in the slow cooker for a few hours for a no fuss holiday dinner.

6 boneless pork chops, 1-1/2 inches thick (about 2 lbs.)
salt and pepper to taste
1 tbsp vegetable oil
32 oz sauerkraut
2 large apples, sliced
1 large sweet onion, sliced
1/2 cup apple juice
1/4 cup Classic Yellow Mustard
3 tbsp firmly packed dark brown sugar
1/2 tsp dried thyme leaves

Steps:

  • SEASON pork with salt and pepper. Heat oil in large skillet over medium heat and brown chops.
  • ADD sauerkraut, apples and onions to slow cooker. Arrange chops on top of sauerkraut mixture. Combine apple juice, mustard, brown sugar, and thyme and pour over chops.
  • COVER and cook on LOW 8 to 9 hours or HIGH 4 to 5 hours, until pork is tender.

1 tablespoon canola oil
6 pork chops (thick cut)
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
1 pinch cayenne pepper
1 teaspoon dry mustard
2 cups sauerkraut (drained and rinsed under cold water)
1 granny smith apple, peeled, cored, and grated
1/2 cup condensed chicken broth

Steps:

  • In a skillet, heat oil over med-high heat and add pork chops in batches to brown on both sides, then add to slow cooker.
  • Sprinkle with flour, salt, pepper, cayenne, and dry mustard.
  • In a bowl, combine sauerkraut and grated apple, then spread over he top of the pork and add chicken stock.
  • Cover and cook on low for about 5 hours or high for about 2 1/2 hours.
