Cooks while you sleep! Some fun variations of this recipe: before cooking (during prep) you can add chunks of sourdough bread, diced chiles, salsa, and/or diced green onions. You can use sage or regular sausage in place of the maple sausage, if desired.

1 (26 ounce) package frozen hash brown potatoes, thawed
12 eggs, beaten
1 cup milk
1 tablespoon ground mustard
salt and ground black pepper to taste
1 (16 ounce) package maple-flavored sausage
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Spray the crock of a slow cooker with cooking spray. Spread hash browns to cover the bottom of the slow cooker crock.
  • Whisk eggs, milk, mustard, salt, and black pepper together in a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Spread sausage over hash browns and spread Cheddar cheese over sausage. Pour egg mixture over cheese.
  • Cook on Low for 6 to 8 hours.

1 pound bacon, (chopped into strips)
1/2 red onion, (finely chopped)
1 pound smoked pulled pork
1/2 cup barbecue sauce
1 (30-ounce) bags of frozen hash browns, (divided**)
2 pounds cheddar cheese, (shredded and divided)
18 eggs
3/4 cup milk
1/2 teaspoon salt
1 teaspoon white pepper
1/4 cup green onion, (chopped)
Cheese, (shredded)
Sour cream
Salsa
Tortillas

Steps:

  • Start assembling ingredients the night before serving.
  • Spray a 6-quart slow cooker with non-stick cooking spray. Preheat Slow Cooker.
  • Measure out 1/4 cup of shredded cheese and 1/4 cup of red bell pepper. Set these aside for garnishment later.
  • In large pan over medium-high heat, cook chopped bacon for a few minutes until partially cooked. Add chopped red onions to bacon and continue to cook until bacon has browned. Drain off the fat and discard. Set aside the cooked bacon mixture on a plate, lined with a paper towel, to allow remaining fat to drain off. Reserve 1/4 cup of cooked bacon for garnishment.
  • In a medium sized bowl, mix together the smoked pulled pork with the barbecue sauce; set aside. You want the pork to be moistened with the sauce and not drowning in it.
  • Cover the bottom layer of the slow cooker with 1/2 of the hash browns (one 30-ounce bag). Next, layer with 1/2 of the cooked bacon mixture and then the pulled pork mixture. Sprinkle with 1/2 of remaining chopped red bell pepper and 1/2 of shredded cheddar cheese. Repeat steps of second layering in the following order: hash browns, bacon mixture, pulled pork, red bell pepper, and ending with remaining shredded cheddar cheese on top; set aside.
  • In medium-sized bowl, add the eggs, milk, salt, and white pepper. Whisk together until all the egg yolks are broken up and everything is blended together. Pour the egg mixture evenly over the entire top of the casserole layers.
  • Cover the slow cooker with a lid and cook for 4 to 5 hours on high heat or 8 hours over low heat.
  • When ready to serve, garnish the top with shredded cheddar cheese, bacon, bell pepper, and green onions.
  • You can also offer your guests sour cream, salsa, shredded cheese for topping options. Offer tortillas on the side if you would like your guests to prepare as a breakfast burrito.
  • Serve immediately and enjoy.
  • Serves many.

4-1/2 teaspoons paprika
2 tablespoons coarsely ground pepper, divided
1 tablespoon kosher salt
1 teaspoon chili powder

1 boneless pork shoulder butt roast (3 to 4 pounds), cut in half
1 cup cider vinegar
1/4 cup beef broth
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce
1-1/2 teaspoons hickory Liquid Smoke, optional
10 kaiser rolls, split

Steps:

  • In a small bowl, combine the brown sugar, paprika, 1 tablespoon pepper, salt, chili powder and cayenne. Rub over roast; cover and refrigerate for 8 hours or overnight., Place roast in a 4- or 5-qt. slow cooker. Combine the vinegar, broth, barbecue sauce, Worcestershire sauce, Liquid Smoke, if desired, and remaining pepper; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat from slow cooker; cool slightly. Shred meat with two forks and return to the slow cooker; heat through. Using a slotted spoon, place 1/2 cup on each roll.

1 teaspoon vegetable oil
1 (4 pound) pork shoulder roast
1 cup barbeque sauce
½ cup apple cider vinegar
½ cup chicken broth
¼ cup light brown sugar
1 tablespoon prepared yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 extra large onion, chopped
2 large cloves garlic, crushed
1 ½ teaspoons dried thyme
8 hamburger buns, split
2 tablespoons butter, or as needed

Steps:

  • Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.
  • Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices.
  • Spread the inside of both halves of hamburger buns with butter. Toast the buns, butter side down, in a skillet over medium heat until golden brown. Spoon pork into the toasted buns.

1 tbsp vegetable or rapeseed oil
4 pork shoulder steaks (about 750g), cut into large chunks
1 onion, chopped
1 leek, chopped
1 carrot, chopped
bundle of woody herbs (bouquet garni) - we used 2 bay leaves, 3 sage leaves and 4 thyme sprigs, plus a few thyme leaves to serve
1 chicken stock cube
2 tsp Dijon mustard
1 tbsp cider vinegar
2 tsp cornflour
1 tbsp honey

Steps:

  • Heat your slow cooker. Drizzle the oil in a wide frying pan over a high heat. Season the pork, then add to the hot pan. Avoid overcrowding the meat - you may want to do this in batches. Cook until deep brown all over, then transfer to the slow cooker. Add the onion and leeks to the frying pan and cook for a few mins, until they soften. Add a splash of water and scrape any tasty bits from the bottom, then tip everything into the slow cooker. Add the carrot, herbs, stock cube, mustard and vinegar, season, then add enough water to just cover the ingredients. Stir, then set your slow cooker on low for 6-8 hrs, or high for 5-6 hrs.
  • In a saucepan, mix the cornflour and honey with 1-2 tsp of liquid from the slow cooker, until you have a smooth paste. Add 100ml more liquid, bring to a simmer until thickened, then stir back into the casserole. Serve with mash or dumplings, scattered with thyme leaves.

2kg pork shoulder, skin removed
1 onion, sliced
2 tsp smoked paprika
½ tsp cinnamon
1 tbsp flour
2 tsp oil
4 garlic cloves, crushed
160ml cloudy apple juice
1 tbsp black treacle
2 tbsp honey
3 tbsp apple cider vinegar
50g onion marmalade
1 fennel bulb, sliced thinly
1 apple, sliced thinly
juice 1 lemon
8 - 10 bread rolls
English mustard
mayonnaise (optional)

Steps:

  • Put the onion slices at the bottom of the slow cooker. In a small bowl mix together 1 tbsp salt with 1 tsp ground black pepper, the smoked paprika and cinnamon. Put the flour onto a plate then rub the spice mixture over the pork.
  • Heat the oil in a large frying pan and roll the spiced pork in the flour before putting it into the pan to sear it on all sides. Once the meat is starting to pick up a golden colour pop it on top of the onion slices in the slow cooker.
  • In a large jug combine all the ingredients for slow cooking the pork then pour over the meat. Pop the lid on and cook on the low setting for 8 hours.
  • When you're ready to serve, take the meat out of the slow cooker leaving the cooking liquor behind. Put the cooked meat on a roasting tray or large shallow bowl and pull it into bite-size chunks and shred with 2 forks. Ladle a little of the cooking juices over the pork and mix together.
  • Toss the fennel and apple slices in the lemon juice and season well then serve along with the pulled pork in bread rolls. Spread the rolls with a little English mustard and mayonnaise if you like.

10 (8 inch) corn tortillas
3 cups cooked pulled pork
4 tablespoons canned black beans, rinsed
½ (8 ounce) package cream cheese, cut into cubes
2 tablespoons chopped fresh cilantro, or more to taste
1 ½ cups salsa, or more to taste
6 tablespoons leftover cooked rice
8 tablespoons shredded Mexican cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Line the bottom of a casserole dish with 6 corn tortillas, so that the bottom and sides are covered.
  • Add 1/2 of the pulled pork, 1/2 of the black beans, 1/2 of the cream cheese, 1/2 of the cilantro, 1/2 cup of salsa, 1/3 of the cooked rice, and 3 tablespoons Mexican cheese blend. Cover with 4 corn tortillas. Repeat layering of the ingredients, finishing with the remaining Mexican cheese blend.
  • Bake in the preheated oven until cheese is melted and bubbly, about 25 minutes.
