3 skinless, boneless chicken breast halves
½ (8 ounce) jar medium salsa
¼ cup tomato sauce
2 cloves garlic, minced
1 small red onion, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1 pinch salt and fresh ground pepper to taste

Steps:

  • Arrange the chicken breasts in the bottom of a slow cooker, and pour in the salsa and tomato sauce. Add the garlic and onion, and sprinkle in the cumin, chili powder, salt, and pepper. Set the cooker on Low, and cook until the chicken is very tender, 4 to 5 hours. Shred the chicken with two forks for serving.

This slow cooker shredded chicken can be made with thighs or breasts. It's great in tacos, fajitas, or anything you want to put with it!

1 tablespoon olive oil
2 tablespoons chili powder
2 teaspoons ground paprika
1 ½ teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
4 (5 ounce) boneless, skinless chicken thighs
3 cups chicken stock
1 chipotle pepper in adobo sauce, or more to taste
¼ cup tomato paste, or to taste

Steps:

  • Place olive oil in the bottom of a slow cooker.
  • Mix chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper together in a small bowl.
  • Rub chicken thighs with some of the spice rub and place in the slow cooker. Cover with chicken broth. Add remaining spice mixture and chipotle pepper in adobo and stir until incorporated. Mix in tomato paste.
  • Cover and cook until chicken is no longer pink in the centers and juices run clear, on Low, 7 to 8 hours, or High, 4 to 5 hours. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).
  • When you're ready to serve, take chicken out and shred with forks. Place back in the sauce and toss to coat.

1 tablespoon olive oil
8 large chicken thighs, skin removed (about 3 lb)
1 large onion, chopped (1 cup)
2 (14 1/2 ounce) cans diced tomatoes with green chilies, undrained
1 (14 1/2 ounce) can crushed tomatoes, undrained
2 tablespoons honey
1 1/2 teaspoons ground cumin
1 teaspoon ground cinnamon
1/3 cup creamy peanut butter
2 cups hot cooked couscous
1/2 cup dry roasted salted peanut

Steps:

  • 1. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil about 4 minutes, turning once, until brown.
  • 2. In 4- to-5-quart slow cooker, mix onion, diced and crushed tomatoes, honey, cumin and cinnamon. Add chicken. Spoon tomato mixture over chicken.
  • 3. Cover and cook on Low heat setting 7 to 8 hours.
  • 4. Stir in peanut butter until melted and well blended. Serve chicken and sauce over couscous.
  • 5.Sprinkle with chopped roasted peanuts and cilantro if you like.

1/2 cup fat-free reduced-sodium chicken broth
2 Tbsp. fresh lime juice
1/3 cup pickled jalapeño slices, drained
1 Tbsp. cornstarch
1 Tbsp. water
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, cubed
2 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Sprinkle chicken with taco seasoning. Place chicken in slow cooker. Pour broth and lime juice around chicken. Top with jalapeño peppers. Cover with lid.
