1 cup mushroom, sliced
1 pinch salt
1 pinch pepper
2 tablespoons flour
1 cup milk
1 cup shredded parmesan cheese
1 cup shredded cheddar cheese
2 cups shell pasta, cooked
truffle oil
1 tablespoon fresh chives, chopped

Steps:

  • Melt 1 tablespoon of butter in a medium pot over medium heat. Add the mushrooms, salt, and pepper and cook until the mushrooms are softened. Remove from the pot.
  • Add the remaining 2 tablespoons of butter and the flour to the pot. Whisk until the flour is toasted, approximately 2 minutes.
  • Add the milk while whisking continuously to avoid lumps. Cook until the sauce is thickened.
  • Whisk in the Parmesan and cheddar cheeses and season with salt and pepper.
  • Add the cooked pasta and mushrooms. Mix until the sauce coats the pasta well.
  • Top with truffle oil and chives.
  • Enjoy!

1/2 pound shiitake mushrooms, stems removed and caps sliced 1/2-inch
2 tablespoons unsalted butter
1/2 pound cremini mushrooms, stems removed and caps sliced 1/2-inch
3 tablespoons cream sherry
Kosher salt
1 pound pasta such as cavatappi
3 ounces white truffle butter, such as D'Artagnan
1/2 cup all-purpose flour
1 quart whole milk, scalded
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 1/2 to 3 cups)
1 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
2 garlic cloves, chopped
3 tablespoons chopped fresh parsley
1 1/2 cups fresh white bread crumbs

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the butter and 2 tablespoons of olive oil in a large (12-inch) saute pan, add the mushrooms, and cook over medium heat for 3 to 5 minutes, until they are tender. Add the sherry and continue to saute for a few more minutes, until the sherry is absorbed. Set aside.
  • Bring a large pot of water to a boil and add a splash of olive oil and a pinch of salt. Add the pasta and cook for 6 to 8 minutes, until al dente. Drain well.
  • Meanwhile, melt the truffle butter in a large (4-quart) saucepan and whisk in the flour. Cook for 2 minutes over low heat, stirring constantly with a whisk. Slowly whisk in the hot milk and cook for 2 minutes, stirring constantly with a wooden spoon, until the white sauce is thickened and creamy. Off the heat, add the Gruyere, Cheddar, 1 1/2 tablespoons salt, the pepper, and nutmeg.
  • Combine the pasta, sauce, and mushrooms in a large bowl and pour them into a 10 by 13 by 2-inch baking dish.
  • Place the garlic and parsley in the bowl of a food processor fitted with the steel blade and pulse until they're minced. Add the bread crumbs and pulse to combine. Sprinkle the crumbs over the pasta and bake for 35 to 45 minutes, until the sauce is bubbly and the crumbs are golden brown. Serve hot.

4 ounces sharp Cheddar, grated

Kosher salt and freshly cracked black pepper
2 cups canned fried onions

Steps:

  • Preheat the oven to 375 degrees F.
  • Bring a large pot of water to a boil. Cook the macaroni according to the package directions. Drain and let cool, then transfer to a large bowl.
  • In a medium saucepan, heat the soup over medium heat, stirring often to prevent scorching. Whisk in the Cheddar and Swiss, followed by the truffle oil. Add a splash of water if it gets too thick.
  • Add the celery and allspice to the bowl of macaroni, then gradually pour over the cheese sauce--you can use less or more sauce depending on how creamy you want the casserole. Season with salt and pepper and fold together.

2 Tbs truffle oil
1 tsp fresh thyme leaves
Pasta
1 lb Campanelle or other fun shaped pasta
½ cup Panko bread crumbs
truffle oil for drizzling

Steps:

  • White Sauce Sauté the garlic in butter and oil until fragrant over medium high heat, whisk in flour and cook 1-2 min. Gradually whisk in milk and continue stirring until thickened. Lower heat and add cheeses a little at a time until incorporated and the sauce is velvety smooth. Add salt, pepper, thyme and stir. Set aside. Mushrooms Sauté garlic in oil over medium high heat until fragrant, add mushrooms and thyme and cook until golden brown and slightly caramelized. Sprinkle with salt and pepper. Pasta Pre-heat oven to 350 Deg. Cook pasta according to the directions but under cook by 1-2 minutes. Drain and drizzle pasta with a bit more truffle oil, mix in mushrooms, white sauce and place in a buttered 4 quart ovenproof dish. Top with panko and drizzle with truffle oil to help it brown. Bake 20-30 minutes until golden brown and bubbling. Optional step - sprinkle the top with 1-2 oz crumbed blue cheese during the last 5-10 minutes of cooking

This is one of my favorite things to make once the weather gets a chill in the air. It's great for cheese-lovers (like myself) and works great as leftovers or at dinner parties! Truffle oil has by far been one of the best culinary purchases I have made. One little bottle has lasted me a year, and can be used with so many things, like this recipe. Top with a pinch of truffle salt!

1 (16 ounce) package cavatappi (corkscrew macaroni)
6 tablespoons butter
½ cup flour
5 ½ cups milk, divided
2 ½ cups shredded smoked Gouda cheese
2 cups shredded sharp Cheddar cheese
1 ½ cups shredded Swiss cheese
1 ½ cups grated Parmesan cheese, divided
½ cup dry bread crumbs
1 tablespoon truffle oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook cavatappi in boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
  • Melt butter in a large pot over medium-low heat. Whisk flour into butter until mixture has a thick, paste-like consistency, about 30 seconds. Slowly whisk 2 cups milk into butter-flour mixture until smooth. Stir in remaining milk, increase heat to medium high, and cook, whisking constantly, until mixture is thick and almost boiling, 5 to 10 minutes.
  • Stir Gouda cheese, Cheddar cheese, Swiss cheese, and 1 cup Parmesan cheese into milk mixture until cheese melts and cheese sauce is smooth. Fold cavatappi into cheese sauce; pour mixture into prepared baking dish.
  • Stir remaining Parmesan cheese and bread crumbs together in a small bowl. Sprinkle bread crumbs mixture over cavatappi mixture and drizzle truffle oil over the top.
  • Bake in the preheated oven until golden and bubbling, about 30 minutes. Cool for 10 minutes before serving.

1 1/2 cups sliced cremini mushrooms
1 1/2 cups sliced shiitake mushrooms
2 tablespoons oil or 2 tablespoons bacon fat
1 1/2 tablespoons sherry wine vinegar
3 tablespoons butter
3 tablespoons flour
3 cups whole milk, warmed
4 ounces herb chevre cheese, crumbled
4 ounces sharp cheddar cheese, shredded
4 ounces parmigiano-reggiano cheese, separated in 2 2oz piles
1 tablespoon fresh thyme leave
2 teaspoons fresh rosemary, minced
1 teaspoon fresh sage, minced
2 -3 tablespoons white truffle oil, to taste
1 teaspoon crushed red pepper flakes
1/2 cup panko breadcrumbs
10 ounces elbow macaroni
sea salt
fresh cracked black pepper
fresh shaved truffle

Steps:

  • Preheat oven to 400 degrees. Place a large pot of water over high heat and cover. Place a large saute pan with 2 tbsp oil or lard over medium heat. Once the oil is hot, add the mushrooms to the pan and saute for 7-10 minutes or until the mushrooms are fully cooked and slightly caramelized. Toss or stir occasionally. Season with a pinch of kosher salt and black pepper then deglaze the pan with sherry vinegar. Allow all of the vinegar to cook out, then remove the mushrooms from the pan and set aside.
  • Begin the cheese sauce. Add 4 tbsp butter to a medium-sized sauce pan and place the pan on the stove over medium heat. Once all the butter is melted and hot, whisk in 4 tbsp flour. Cook the flour, whisking, for about 30 seconds , just long enough to get rid of the raw flour taste, but not long enough for the flour to start caramelizing. Add the thyme, rosemary, sage, and red pepper flakes. Continue stirring and allow the herbs to saute for about another 30 seconds. Slowly pour in the milk while whisking continuously, so the roux and milk incorporate smoothly and there are no lumps. Allow the bechamel to come to a simmer (it won't gain it's full thickness until it does), stirring occassionally.
  • Pasta: Liberally salt the pot of boiling water, almost to the point it tastes like sea water. This may take a few handfuls of salt . Add the pasta to the water and cook the pasta for a minute or two less than the suggested time on the box.
  • Once the bechamel has reached a simmer, stir in the chevre, cheddar, 2oz of parmigiano, and truffle oil until all the cheese has melted. Turn off the heat and and taste the sauce for seasoning levels. Season with salt and pepper as necessary. In small mixing bowl, mix together the panko and remaining 2oz of parmigiano reggiano.
  • Strain the pasta immediately once finished cooking. In a mixing bowl, toss the pasta, cheese sauce, and mushrooms together. Pour the macaroni and cheese into a deep glass or ceramic loaf pan and sprinkle the panko/parmigiano mixture evenly across the top.
  • Bake the mac-n-cheese in the upper part of the oven for about 15 to 20 minutes or until the topping is golden and the cheese sauce is bubbly. Serve immediately.

1 teaspoon truffle oil
2 slices bacon, cooked & minced
6 tablespoons butter
1 onion, diced
1/3 cup all-purpose flour
1 1/2 cups milk
3/4 cup chicken broth
1/2 teaspoon dried mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup white cheddar cheese, grated
1/2 cup gruyere, grated
1/4 cup parmesan cheese

Steps:

  • Preheat the oven to 350 degrees.
  • Cook macaroni according to package directions.
  • Toss macaroni with truffle oil & set aside.
  • Melt the butter in a saucepan over medium heat. Add the onion & cook over medium heat for 5 minutes. Add the bacon & the flour, combine well & cook for 1 minute.
  • Whisk in the milk & chicken broth, stirring continuously. Bring to a boil. When the mixture comes to a boil, take off the heat & stir in the mustard, salt, pepper & cheeses. Stir well until all the cheese melts & is well incorporated into the sauce.
  • Mix together the sauce and the macaroni and pour into a greased baking dish.
  • Bake at 350 for 20 minutes.

200g macaroni
2 leeks
6 mushrooms (closed cap are cheap)
4 tomatoes
2 tbsp olive oil
2 x mini Le roulé garlic and herb soft cheese

Steps:

  • Fill a large sauté pan with boiling water. Tip in the macaroni and cook according to the pack instructions. (It may take slightly longer than suggested). Meanwhile, trim, wash and slice the leeks, quarter the mushrooms and roughly chop the tomatoes.
  • Drain the pasta and keep warm. Heat the oil in the pan. Add the leeks and mushrooms and fry for 4-6 mins until the leeks are tender. Toss in the tomatoes at the last minute. Season with salt if you want to and black pepper. Stir in the macaroni and let it warm through, then crumble the cheese over.

500g macaroni
1l whole milk
2 bay leaves
60g butter
60g plain flour
2 tbsp Dijon mustard
2 tbsp roughly chopped thyme leaves
80g porcini white truffle paste or 2 tbsp truffle oil
1 tbsp porcini powder (or dried porcini mushrooms blitzed to a powder in a food processor)
80g taleggio cheese , chopped
125g ball of mozzarella , chopped
100g mature cheddar , grated
30g fresh breadcrumbs
30g parmesan , finely grated

Steps:

  • Cook the macaroni following pack instructions until al dente. Drain, rinse with cold water and set aside to cool.
  • Tip the milk and bay leaves into a pan and bring to a simmer. Remove from the heat. Melt the butter in a large non-stick saucepan, then stir in the flour to make a thick paste, continuing to stir for 3-4 mins. Remove and discard the bay leaves from the milk, then gradually pour it into the flour and butter mix, continuously stirring to keep the sauce smooth. Add the mustard, thyme, truffle paste and porcini powder, then stir in the taleggio cheese and mozzarella until melted slightly. Remove from the heat, tip in the macaroni and stir to coat. Scrape into an ovenproof dish. Will keep chilled for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Sprinkle over the cheddar, breadcrumbs and parmesan, and bake for 20 mins until golden. For a crispy top, grill for 5 mins or until just golden. Serve straightaway.
