2 pounds beef top round steak
1/2 cup grated carrot
1/3 cup chopped zucchini
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
1/4 cup sliced green onions
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
1 jar (14 ounces) meatless spaghetti sauce
Hot cooked spaghetti
Additional Parmesan cheese, optional

Steps:

  • Cut meat into six serving-size pieces; pound to 1/4-in. thickness. Combine the vegetables, cheese and seasonings; place 1/3 cup in the center of each piece. Roll meat up around filing; secure with toothpicks., In a large skillet, brown roll-ups in oil over medium-high heat. Transfer to a 5-qt. slow cooker; top with spaghetti sauce. Cover and cook on low for 6-8 hours or until meat is tender. , Discard toothpicks. Serve roll-ups and sauce with spaghetti. Sprinkle with additional cheese if desired.

I was given this recipe at a party a long time ago by the hostess. It is a really easy appetizer to make and always the first one to disappear. Toothpicks are necessary to secure these little roll ups.

1 (1 pound) loaf white bread, crusts trimmed
1 (8 ounce) package cream cheese, softened
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  • Arrange roll ups in a single layer on a medium baking dish. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned. Serve warm.

1 can (4 ounce) mushrooms stems and pieces, undrained
2 tablespoons butter or margarine, melted
1 package (6 ounce) seasoned stuffing mix
1 beef flank steak (1 3/4 pounds)
1 envelope brown gravy mix
1/4 cup green onion, chopped (about 3)
1/4 cup dry red wine or beef broth

Steps:

  • In a bowl, toss the first 3 ingredients. Spread over steak to within 1 inch of edges. Roll up jelly-roll style, starting with a long side; tie with kitchen string. Prepare gravy mix according to package directions; add onions and wine or broth. Pour over meat. Cover and cook on low 8-10 hours.Remove meat to a serving platter and keep warm. Strain cooking juices and thicken if desired. Remove string from roll-up; slice and serve with gravy.

I searched and searched for just the right rolled flank steak recipe and couldn't find it. So, I created my own! This was a big hit when I made it for company.

1 (2 pound) beef flank steak
¼ cup soy sauce
½ cup olive oil
2 teaspoons steak seasoning
8 ounces thinly sliced provolone cheese
4 slices thick cut bacon
½ cup fresh spinach leaves
½ cup sliced crimini mushrooms
½ red bell pepper, seeded and cut into strips

Steps:

  • Place the flank steak on a cutting board with the short end closest to you. Starting from one of the long sides, cut through the meat horizontally to within 1/2 inch of the opposite edge. (You can also ask your butcher to butterfly the flank steak for you instead of cutting it yourself.)
  • Mix the soy sauce, olive oil, and steak seasoning together in a gallon-sized resealable plastic bag. Marinate flank steak in the refrigerator 4 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a glass baking dish.
  • Lay out the flank steak flat in front of you with the grain of the meat running from left to right. Layer the provolone across the steak, leaving a 1-inch border. Arrange the bacon, spinach, red pepper, and mushrooms across the cheese covered steak in stripes running in the same direction as the grain of the meat. Roll the flank steak up and away from you, so that when the roll is cut into the pinwheel shape, each of the filling ingredients can be seen. Roll firmly, but be careful not to squeeze the fillings out the ends. Once rolled, tie every 2 inches with kitchen twine.
  • Place in prepared baking dish, and bake in preheated oven for one hour, or until the internal temperature reaches 145 degrees F (65 degrees C). Remove from the oven and let rest for 5 to 10 minutes before cutting into 1 inch slices. Be sure to remove the twine before serving!

1 cup all-purpose flour

1 medium Italian plum tomato, cut into quarters, sliced
3/4 cup savory beef gravy (from 12-oz jar)

Steps:

  • Place steak on work surface; sprinkle with Italian seasoning, salt and pepper. Top with onion slice halves. Roll up beef, jelly-roll fashion, with onion inside; tie with string.
  • In 2- to 3-quart slow cooker, place beef roll, seam side down. Sprinkle garlic, mushrooms and tomato around roll. Spoon gravy over roll.
  • Cover; cook on Low setting 5 to 6 hours.

16 slices cooked OSCAR MAYER Bacon, crumbled
8 CLAUSSEN Kosher Dill Pickle Spear s
1 Tbsp. oil
1/2 cup dry red wine
1 WYLER'S Instant Bouillon Beef Flavored Cube
1 Tbsp. flour

Steps:

  • Place onions in slow cooker. Cut steak into 8 equal pieces. Spread with mustard; top with bacon and pickles. Roll up each steak piece, starting at one short side; tie with kitchen string to secure.
  • Heat oil in large nonstick skillet on medium heat. Add roll-ups; cook 3 to 4 min. or until evenly browned, turning occasionally. Transfer to slow cooker. Add wine and bouillon cube; cover with lid.
  • Cook on LOW 7 to 8 hours (or on HIGH 5 to 6 hours). Use tongs to transfer roll-ups to platter; remove and discard string. Cover roll-ups to keep warm. Add 2 Tbsp. liquid from slow cooker to flour in small bowl; whisk until smooth. Ladle remaining cooking liquid into medium microwaveable bowl. Add flour mixture; whisk until blended.
