This is a yummy recipe for a light wheat roll that I keep in my special book of most liked recipes. They are not complicated at all to make, just a lot of rising time.

Number Of Ingredients 9

2 (.25 ounce) packages active dry yeast
1 ¾ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
¼ cup butter, melted and cooled
1 egg, beaten
2 ¼ cups whole wheat flour
2 ½ cups all-purpose flour
¼ cup butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Mix sugar, salt, 1/4 cup melted butter, egg, and whole wheat flour into yeast mixture. Stir in all-purpose flour, 1/2 cup at a time, until dough pulls away from the sides of the bowl. Turn dough out onto a well floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place dough in bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Punch down dough, cover, and let rise in warm place until doubled again, about 30 minutes.
  • Grease 2 dozen muffin cups. Punch down dough, and divide into two equal portions. Roll each into a 6x14 inch rectangle, and cut rectangle into twelve 7x1 inch strips. Roll strips up into spirals, and place into muffin cups. Brush tops with melted butter. Let rise uncovered in a warm place 40 minutes, or until doubled in bulk.
  • Preheat oven to 400 degrees F (200 degrees C). Bake for 12 to 15 minutes, or until golden brown. Remove from oven, and brush again with melted butter.

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°)
2 cups all-purpose flour
1 cup whole wheat flour
2 tablespoons butter, softened
1 tablespoon honey
1 tablespoon molasses
1 teaspoon salt
1 teaspoon Italian seasoning

Steps:

  • In a large bowl, dissolve yeast in warm water. Add remaining ingredients. Beat on medium speed 3 minutes (batter will be sticky). Do not knead. Cover and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 375°. Stir batter down. Set aside 1/4 cup batter. Fill muffin cups coated with nonstick cooking spray half full. Top each with 1 teaspoon reserved batter. Cover and let rise until doubled, about 8-12 minutes., Bake 10-15 minutes or until golden brown. Cool 1 minute before removing from pan to a wire rack.

Really nice dinner rolls that are easy to make and good to eat. Brush rolls with melted butter when they come out of the oven.

1 tablespoon active dry yeast
¼ cup white sugar, divided
½ cup warm water
4 ½ cups all-purpose flour
1 ½ teaspoons salt
1 cup lukewarm milk
2 room-temperature eggs, lightly beaten
3 ½ tablespoons unsalted butter, melted and cooled
cooking spray

Steps:

  • Place yeast and 2 teaspoons sugar in a medium bowl. Pour in water. Let stand until frothy, about 5 minutes.
  • Place remaining sugar, flour, and salt in a separate bowl; mix to combine. Make a well in the center. Add yeast mixture, milk, eggs, and butter. Mix with a wooden spoon until a thick, sticky batter forms.
  • Cover dough with a clean, damp dish towel and place in a warm place. Let rise until almost tripled in volume, 1 1/2 to 2 hours.
  • Line a 9x13-inch baking pan with parchment paper, leaving an overhang on 2 sides. Punch dough down to deflate. Mix briefly in the bowl to get rid of bubbles.
  • Dust a work surface with flour. Scrape dough out and dust the top with flour. Cut into 4 pieces, then cut each piece into 3 pieces.
  • Press down 1 piece of dough with your palm. Use your fingers to gather it into a ball. Flip so the smooth side faces up and roll briefly to form a ball. Place roll in the prepared baking pan. Repeat with remaining dough. Line up rolls in a 3x4 grid in the baking pan. Spray the surface of the rolls with cooking spray. Cover with plastic wrap.
  • Place baking pan in a warm place and let rise until almost doubled in size, 30 to 45 minutes. Halfway through the second rise, preheat the oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until surface is golden brown, 15 to 18 minutes. Use parchment paper overhang to lift rolls onto a cooling rack. Serve warm.

2 cups all-purpose white flour
1/2 cup whole wheat flour
1 1/4 teaspoons salt
1/4 teaspoon fast rising yeast
1 1/2 cups water, room-temperature
1 tablespoon vegetable oil
8 tablespoons unsalted butter, melted
6 1/2 tablespoons sugar
3 tablespoons powdered milk
1 large egg, at room temperature
1 1/4 cups all-purpose white flour
1 tablespoon all-purpose white flour

Steps:

  • For the first stage:.
  • Thoroughly combine the flour or flours, salt and yeast in a 3- to 4-quart or larger bowl; mix with a large spoon.
  • Add the water, stirring vigorously until evenly incorporated. Use a greased flexible spatula to scrape down the sides of the bowl.
  • Drizzle the dough top with about 1/2 teaspoon of vegetable oil (no need to measure); use a pastry brush or your fingertips to spread it evenly over the dough and up the sides of the bowl.
  • Cover the bowl tightly with plastic wrap and set aside at a room temperature of about 70 degrees or cooler for 12 to 18 hours.
  • For the second stage:
  • Use a fork to beat together 6 tablespoons melted butter, the sugar and powdered milk in a medium bowl until well blended.
  • Beat in the egg until well incorporated.
  • Vigorously stir the mixture into the raised dough until it deflates and the ingredients are well blended; the dough will seem rubbery.
  • Vigorously stir in the 1 1/4 cups flour until thoroughly incorporated.
  • (Second-stage mixing may be completed in a heavy-duty stand mixer, if desired.
  • Transfer the raised dough to the mixer bowl; complete the mixing steps on low speed using the paddle.).
  • Generously grease 12 "Texas-size" muffin tin cups or 24 standard-size muffin cups, or coat them thoroughly with nonstick cooking oil spray.
  • Using a well-greased 1/4-cup measure for large muffin cups and a 1/8-cup measure (or coffee scoop) for small muffin cups, place a scoopful of dough in each cup.
  • Divide any leftover dough evenly among the cups.
  • Use 2 tablespoons total of the melted butter to drizzle over all the roll tops.
  • (Use your fingertips to spread out the butter and smooth each top until the dough surface looks smooth. Sift a little flour over each cup; cover the muffin tins with plastic wrap.
  • For a "regular" rise:
  • Let the dough stand at room temperature for 1 to 1 3/4 hours or until the dough nearly reaches the cup rims.
  • (The time will vary considerably depending on the temperature of the room and the length of the first rise.)
  • Remove the plastic wrap. Let stand until the dough rises just above the rims.
  • For a "quick" rise:
  • Fill a microwave-safe container with 1 cup of the water and set it far to one side of the microwave oven.
  • Microwave on high for about 2 minutes, until the water almost boils.
  • Put a muffin tin in the microwave oven as far from the water as possible.
  • Let rise 30 to 45 minutes or until the dough nears the cup rims.
  • Remove the plastic wrap. Let stand until the dough rises just above the rims.
  • To bake:
  • Position an oven rack in the middle third of the oven; preheat to 400 degrees.
  • Gently transfer the muffin pans to the middle oven rack; jarring can cause deflating.
  • Bake about 15 to 18 minutes for smaller rolls and 17 to 21 minutes for larger rolls or until well browned on top and hollow sounding when thumped with a finger.
  • Transfer the pans to wire racks and let cool just slightly, then run a knife around the rolls to loosen.
  • Sift a little flour over the rolls just before serving, if desired. The rolls are best served warm.

1 1/2 cups warm milk (about 120 degrees)
1/4 cup unsalted butter, melted
1/4 cup safflower oil
2 large eggs
3 cups whole wheat flour
2 cups cake flour
1/4 cup sugar
1 1/4 teaspoons salt
2 1/4 teaspoons active dry yeast
1 egg
2 tablespoons wheat germ

Steps:

  • Place all dough ingredients in the bread machine pan in order indicated with your owner's manual.
  • Use the DOUGH setting.
  • After the cycle is complete, punch down dough and remove from pan.
  • On a floured cutting board, shape into rolls and place on two parchment-lined baking pans.
  • Let rise in a warm place for 30 minutes or until double in size.
  • Preheat oven to 400 degrees.
  • Topping: Whisk the remaining egg (and a little bit of water about 1 tablespoon) in a small bowl, and brush the tops of the rolls with it; sprinkle with wheat germ.
  • Bake the rolls until light brown on top, approximately 20 minutes.
  • Prep time does not include preparing the dough in the ABM.

I got this in my e-mail from preparedpantry.com. It calls for baker's dry milk. You can use regular dry milk but the yeast will not grow as rapidly. It also calls for dough conditioner which makes the bread lighter and better textured. I had to write dough enhancer because zaar's computer wants to write hair conditioner. It doesn't say how many rolls it makes so I guessed at 12.

1/4 cup melted butter
1 1/2 cups water, at 105 to 110 degrees
2 1/2 cups bread flour
1 1/2 cups whole wheat flour
1 (7 g) packet instant yeast
2 teaspoons salt
1/4 cup granulated sugar
1/4 cup baker's dry milk
1 teaspoon dough enhancer (conditioner) (optional)

Steps:

  • Heat the butter until it is almost melted and set aside.
  • Grease the inside of a 10x 15 inch pan or a large baking sheet, including the rims.
  • Measure the water. Use an insta-read thermometer to get the temperature right.
  • Place the bread flour and the yeast in the bowl of your stand-type mixer equipped with a dough hook. Turn the mixer on for a couple of bursts to disperse the yeast. Add the water and mix for 30 to 60 seconds.
  • In another bowl, mix the whole wheat flour with the salt, sugar, dry milk, and dough conditioner. Add this mixture to the wet mixture along with the melted butter.
  • Knead with the dough hook on medium speed for 4 minutes or until the gluten is well-developed.
  • Grease a large mixing bowl. Turn the dough into the large mixing bowl and turn once to grease both sides of the dough ball. Cover the bowl with plastic wrap and set it aside to rise. It should double in size in about 45 minutes. If it has not, let it rest longer.
  • Divide the dough into balls about 2 inches in diameter. Place the balls on the greased pan about 1/2 inch apart. Cover with plastic wrap and let rise again. They should be double in size in about 45 minutes. Let them rise until they are very puffy. If they start to blister, poke the blister with a toothpick and place the rolls in the oven.
  • Bake at 350* for about 25 minutes or until the tops are browned and the internal temperature is 190*. Remove from the oven. After a few minutes, remove the rolls from the baking pan and place on a wire rack to cool. Serve warm.
