Roasted Brussels Sprouts with Honey image

The perfect balance of sweetness and spices makes this roasted Brussels sprouts with honey recipe a real keeper!

1 pound Brussels sprouts
3 tablespoons olive oil
1 tablespoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon salt
1 pinch garlic powder
1 pinch onion powder
1 tablespoon honey

Steps:

  • Preheat the oven to 425°F. Trim the stem ends of the sprouts, then cut each sprout in half on the vertical axis.
  • Toss the cut sprouts with the oil. Add the spices and toss again until fully coated. Line a baking sheet with parchment paper and place the sprouts cut side down at least 1/2 inch apart.
  • Bake for 15 to 20 minutes, or until the cut sides of the sprouts are nicely browned and any loose leaves have become brown and crisp. Carefully toss the hot sprouts with the honey, then serve.

1 (8-ounce) can cranberry sauce
1/4 cup cranberry juice
1/2 pound bacon, cut into 1-inch strips
2 pounds Brussels sprouts, cleaned
2 shallots, sliced
4 cloves garlic, smashed
Salt and freshly ground black pepper

Steps:

  • Special equipment: toothpicks
  • Preheat the oven to 425 degrees F.
  • In a small pot combine the cranberry sauce and the juice. Bring to a simmer over low heat, whisking until smooth. Remove from the heat and set aside
  • In a large frying pan with a metal handle saute the bacon until crispy, then remove from pan to a plate lined with paper towels. To the same pan add the Brussels sprouts, shallots, and garlic and season with salt and pepper, to taste. Saute for 5 minutes over medium-high heat to give the Brussels sprouts a little color. Put the pan in the oven for 10 minutes. Remove from the oven and pour the cranberry glaze over the top. Return to the oven and roast for another 10 minutes.
  • Skewer each Brussels sprout with a toothpick, arrange on a serving platter and serve warm.

1/2 cup olive oil
1 cup sugar
3/4 cup balsamic vinegar
1 cup dried cranberries

Steps:

  • Preheat the oven to 375 degrees F.
  • Trim/clean the Brussels sprouts, then cut them in half. Arrange on 2 baking sheets and toss with the olive oil. Roast until brown, 25 to 30 minutes.
  • Combine the balsamic vinegar and sugar in a saucepan. Bring to a boil, then reduce the heat to medium-low and reduce until very thick.
  • Drizzle the balsamic reduction over the roasted sprouts, then sprinkle on the dried cranberries.

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the larger Brussels sprouts into quarters; halve the smaller ones.
  • Place the Brussels sprouts in a large baking dish or on a baking sheet. Add the garlic, sprinkle with salt and pepper, and pour over the olive oil. Toss to coat. Transfer to the oven and roast for 35 minutes. Crank up the oven to 450 degrees F and roast until tender and the outer leaves are browned and crispy, another 10 minutes. Transfer to a serving dish. Serve immediately.

  • Stir Brussels sprouts and lemon juice into butter and oil; cook, stirring constantly, until sprouts are just heated through and starting to soften, about 45 seconds. Remove from heat.

Oil for frying
½ cup butter
2 tbsp Calabrian Chili Rub**
1 teaspoon sea salt
⅓ cup honey
1 teaspoon sugar

Steps:

  • Wash Brussel sprouts
  • Bring a saucepan of water to a boil and blanch for 4 minutes.
  • Remove from water and drain excess water.
  • Mix together chili rub, sea salt, honey, and sugar.
  • Flash fry the Brussel sprouts and drain excess grease.
  • Melt butter and mix with the other mixture.
  • Pour over the Brussel sprouts.

1 large leek, trimmed and julienned (white parts only)
3 tablespoons olive oil, divided
30 ounces fresh Brussels sprouts, trimmed and halved
1/3 cup dried cranberries
3 tablespoons honey
3 tablespoons walnuts (optional)

Steps:

  • Heat oven to 450 degrees F. On baking sheet, gently toss leeks with 1.5 T olive oil.
  • Arrange Brussels Sprouts cut side down on baking sheet surrounding leeks.
  • Season with salt/pepper, if desired. Roast 20 minutes, until Brussels sprouts are tender.
  • In bowl, gently toss together roasted sprouts, leeks, cranberries, honey and remaining oil.
  • Garnish with walnuts if you like.

  • In a microwave-safe bowl, heat the cranberries in the wine at high power for 2 minutes. Let stand until the cranberries are slightly plumped, about 10 minutes. Drain the cranberries and discard the liquid.
  • In a large skillet, heat the oil. Add the shallots and cook over low heat until softened, about 2 minutes. Add the brussels sprouts and cook over moderately high heat until bright green, about 2 minutes. Add the water and drained cranberries and season with salt and pepper. Cover and cook over moderate heat until the brussels sprouts are tender, about 12 minutes. Uncover and continue cooking until the liquid has evaporated, about 2 minutes. Add the butter and toss to coat. Serve right away.
