BACON-WRAPPED CHICKEN THIGHS SMOTHERED AND STUFFED WITH AWESOME
These are pretty much all of my favorite things layered into one extremely satisfying dish. You may have a lot of leftover bechamel sauce; bout a half of a box of cooked pasta will take care of this for you.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch square pan with parchment paper.
- Trim asparagus spears to extend 1 inch past each side of the thighs.
- Place 1 cup of the mozzarella cheese into a bowl.
- Lay chicken thighs flat on a work surface. Place 1/4 cup mozzarella cheese on each thigh, followed by 3 asparagus spears. Roll thigh around stuffing; wrap 1 bacon slice around each thigh. Tie a 12-inch length of string around the bacon, ensuring bacon ends are secured. Place stuffed thighs in the lined pan.
- Bake in the preheated oven until no longer pink in the center and juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the middle of a thigh should read at least 165 degrees F (74 degrees C).
- Melt 1 tablespoon butter in a small saucepan over medium-high heat; add jalapenos. Cook, stirring regularly, until juices have evaporated, 1 to 2 minutes. Add remaining butter, melt completely, about 1 minute. Stir in flour until it starts to brown, 1 to 2 minutes. Pour in warm milk, 1/3 cup at a time, mixing completely after each addition.
- Bring milk mixture to a boil; reduce heat to medium-low. Simmer, stirring occasionally, until sauce thickens, about 7 minutes. Season sauce with salt and pepper. Add remaining mozzarella cheese, stir gently to incorporate into sauce.
- Cut strings from thighs and smother with sauce.

Steps:
- Fire up your smoker to 225°F (107°C). If you are using a charcoal grill, ensure you set it up for 2-zone cooking.
- While the smoker heats up, make the rub by mixing all rub ingredients in a bowl. Combine thoroughly and then apply to thighs. Apply generously and aim to work into all areas of the chicken skin.
- To wrap the thighs, stretch one piece of bacon to 1.5-2 times its length. Wrap one strip around one thigh. Use toothpicks to hold in place if you need to. Apply more BBQ rub to bacon.
- Transfer thighs to smoker. Cook for 45-60 minutes, until bacon starts to brown. Remove thighs from smoker and tent in foil.
- Place tented thighs back in smoker and cook until the thickest part of the thigh has reached an internal temperature of 165°F (74°C).
- Remove thighs from smoker and allow to rest for 5-10 minutes
BACON, HAM AND CHEESE CHICKEN THIGHS
These bacon-wrapped smoked chicken thighs may sound like pure Americana, but the inspiration comes from Belgrade. In Serbia, grilled chicken and pork are routinely stuffed with smoked ham and piquant cheese. Wrap each thigh with a strip of bacon, then another strip running perpendicular to the first. Tie the bacon in place with butcher's string. ShareTweetPin405 Shares Step 2: Set up your smoker following the manufacturer's instructions and preheat to 300°F. (You'll smoke at a higher than normal temperature to crisp the bacon.) Add the wood as specified by the manufacturer. ShareTweetPin405 Shares Step 3: Place the chicken thighs skin side up on the smoker rack. Smoke the chicken thighs until the outsides and bacon are browned, the cheese is melted, and the temperature in the center reaches 165° to 170°F on an instant-read thermometer, 1 to 1 1/2 hours. Snip the string and remove before serving. ShareTweetPin405 Shares

Steps:
- Preheat the oven to 375 1. Pat dry and season the chicken thighs with garlic & onion powder, salt, and pepper. 2. Take one strip of bacon and starting from below the thigh, begin to wrap the bacon around the thigh as many times so the end of the bacon ends underneath the thigh. Place the thigh with the ends of the bacon facing down in a shallow roasting tray 3. After repeating this on all 8 thighs, place in the oven and roast the thighs for 40 - 45 minutes or until the internal temp of the chicken comes to 165F 4. About 10 minutes before cooking time ends, baste the chicken with the bbq sauce. Flip the thighs over first and baste, then flip them back, right side up, and baste again. 5. Two minutes before cooking time ends, baste any remaining sauce over the thighs. 6. Remove the chicken thighs from the oven and let rest for 5 minutes. 7. Plate and enjoy!
