I found this recipe while browsing thru a cookbook last night. I have had this before and it was really good.

Number Of Ingredients 6

1 1/2 lbs ground beef
2 eggs
1/4 cup ketchup
3/4 cup herb stuffing mix
1/2 ounce ranch dressing mix, mix for dips
1 (6 ounce) package fried onions

Steps:

  • In a large bowl mix ground beef, eggs, herb stuffing mix, ranch seasoning and fried onions.
  • Shape into loaf shape and place into a 9 x 5 inch pan.
  • Cover loosely with foil.
  • Bake at 350°F for 50 - 60 minutes or until meat is thoroughly cooked. If desired, brush with ketchup for the last 10 minutes of cooking, uncovered.

Best meatloaf ever. The Jalapeños don't make this hot at all. Just gives a great flavor. This the bacon and sauce is awesome. I like extra sauce to dip .

1 tablespoon oil
1 onion, chopped
1 cup green pepper, chopped
2 garlic cloves, minced
1 tablespoon jalapeno, finely chopped
2 lbs lean ground beef
2 large eggs, beaten
1 tablespoon flour
3/4 teaspoon salt
1/4 teaspoon pepper
4 slices bacon
1/2 cup ketchup
1/4 cup brown sugar
4 tablespoons white vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion, green pepper, garlic, and jalapeños in the oil.
  • Add the sauted vegetables to hamburger, eggs,flour, salt and pepper. Mix well, I use my hands.
  • put in a baking dish or on a cookie sheet lined with aluminum foil.
  • drape with bacon.
  • combine ketchup, brown sugar, and vinegar. cover the meatloaf.
  • Bake uncovered for 1 1/2 hours . Let stand for 10 minutes.

LIL' CHEDDAR MEATLOAVES



Lil' Cheddar Meatloaves image

We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

1 egg
3/4 cup milk
1 cup shredded sharp cheddar cheese (4oz)
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 teaspoon rubbed sage (optional)
1 lb lean ground beef
2/3 cup catsup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard

Steps:

  • In a bowl, beat the egg and milk.
  • Stir in cheese, oats, onion, salt and rubbed sage.
  • Add beef and mix well.
  • (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
  • Sauce: Combine catsup, brown sugar and mustard.
  • Spoon over each loaf so they are all covered in the sauce.
  • Bake uncovered at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
  • For OAMC:.
  • To Freeze:Place the meat loaves in the casserole dish (without sauce).
  • Wrap with foil and freeze.
  • To Reheat: Defrost overnight.
  • Mix together the sauce and top each meat loaf with sauce.
  • Bake at 350 degrees for 45 minutes or until meat is no longer pink in the center.
  • Cooked meat loaves (already topped with sauce) also freeze very well and then can be defrosted and heated in the microwave for a quick meal.

JALAPENO POPPER-STUFFED MEATLOAF

1 pound ground beef
⅔ cup bread crumbs
2 eggs, whisked
2 teaspoons salt, divided
1 ½ teaspoons ground black pepper, divided
1 (8 ounce) package cream cheese, softened
1 cup grated Cheddar cheese
3 jalapeno peppers, seeded and diced
1 teaspoon garlic powder
aluminum foil
3 tablespoons barbeque sauce, or as needed
2 tablespoons grated Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, bread crumbs, eggs, 1 teaspoon salt, and 1 teaspoon pepper in a large bowl until combined. Press about 3/4 of the meat mixture into the bottom and up the sides of a loaf pan, leaving a well in the middle.
  • Mix together cream cheese, 1 cup Cheddar cheese, jalapeno peppers, garlic powder, remaining 1 teaspoon salt, and remaining 1/2 teaspoon pepper in a separate bowl until combined. Press cream cheese mixture into the well of the meatloaf. Cover with remaining meat mixture, pressing along the edges to seal. Cover with aluminum foil.
  • Bake in the preheated oven until no longer pink in the center, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven, brush with barbeque sauce, and sprinkle with 2 tablespoons grated Cheddar. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place meatloaf under the broiler and cook until barbeque sauce is bubbly and cheese is melted, 2 to 3 minutes.

1 (1 ounce) packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
1/3 cup dry breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients together in a bowl, but avoid excessive handling for a moist meatloaf. Form into a loaf and place in a baking dish or loaf pan.
  • Bake for 40-45 minutes or until the internal temperature reaches 165°F.
  • Remove from oven and let the meatloaf stand covered for 10-15 minutes before slicing.
