CHICKEN FETTUCCINE ALFREDO
We created this sauce with milk because most families have milk in the fridge. If you want to use heavy cream, then just eliminate the flour and replace the milk with heavy cream. Feel free to use any cut of pasta you have. Extra sauce: if you like extra sauce like we do, just cook less pasta. Our photos show it with extra sauce and less pasta.

Steps:
- Cook pasta to al dente according to package instructions, drain and set aside. Reserve some pasta water for thinning out the alfredo sauce if needed later
- Heat a sauce pan on medium-high heat. Melt 2 Tablespoons of butter. Add chicken and sear until all sides are brown and cooked, about 5-8 minutes depending on the thickness of your chicken pieces.
- Remove chicken from pan. Add remaining 2 Tablespoons of butter, then add garlic and cook translucent and fragrant (about 1 minute).
- Whisk in flour and continue whisking to remove large clumps.
- Slowly whisk in the milk. Whisking often to make sure flour lumps are smooth, bring sauce to a low boil. Then reduce heat to low.
- Add dried herbs, mustard powder, parmesan, salt and pepper. Continue whisking until sauce is smooth and begins to thicken.
- Add the pasta and the chicken in the alfredo sauce. Stir to coat everything with the sauce. Add a little pasta water to thin out the sauce if needed. Add additional salt, pepper or cheese on top if needed.

- Saute onion in the butter in a pan until clear. Add the salmon and saute at medium to low heat for approximately 2 more minutes. Very gradually, start to add the cream. Stir constantly until thickened. Sauce should be very thick once you have added all the cream. Top with tomato and parsley; season with pepper.

- Heat oven to 350 degrees. Lightly coat a 3-4 quart baking dish with cooking spray. Set aside.
- Place cooked pasta and chicken in a large bowl. Set aside.
- Melt butter in a large skillet over medium heat. Add garlic and cook for 15 seconds. Whisk in flour and cook for 1 minute. Add in milk, cream, nutmeg, and pepper.
- Add Parmesan cheese and half of the mozzarella. Stir until cheese has melted and sauce is thickened. Taste and adjust seasoning with salt and pepper. Pour sauce over pasta and chicken. Mix well. Pour all ingredients into the prepared baking dish. Top with remaining cheese. Bake for 20 minutes until cheese is golden on top.
- Remove from the oven and let rest for 5 minutes. Serve.

Steps:
- Soak wood chips in water for 30 minutes so they don't catch fire.
- Preheat a smoker to 250 degrees F (120 degrees C).
- Transfer soaked wood chips to an aluminum pan and cover with foil. Poke holes in the top so the smoke can escape. Place chicken, unstacked, onto wire racks. Place the racks into the smoker.
- Smoke chicken until no longer pink in the center and juices run clear, 30 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from heat and let rest and cool enough to handle, about 10 minutes.
- While chicken cools, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; wipe the pan clean. Dice bacon. Dice cooled chicken.
- Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain; transfer to a bowl.
- Melt 1 tablespoon butter in the same skillet used for the bacon over medium heat. Add garlic; cook and stir for 30 seconds. Saute mushrooms until soft, 5 to 7 minutes. Transfer to a plate. Pour wine into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add 1/2 cup butter to melt. Add cream and stir to combine.
- Pour the sauce into the empty pasta pot. Add Parmesan and mozzarella cheeses slowly until melted and combined. Heat over medium-low heat until thickened and reduced, 5 to 7 minutes. Taste and season with salt and pepper. Stir in mushrooms, bacon, and chicken. Add fettuccine and mix.
