About 1 tablespoon mined fresh herbs, such as chives, chervil, tarragon, or thyme, or a mixture
4 small goat cheese rounds (each about 2 ounces)
8 extra-thin slices smoked bacon, pancetta, or smoked ham (each about 1 1/2- by 8-inches)

Steps:

  • Sprinkle the herbs on both sides of each goat cheese round, pressing down lightly so they adhere to the cheese.
  • Wrap 2 slices of bacon, crisscross fashion, around each round of goat cheese. (The goat cheese can be prepared to this stage up to 8 hours in advance. Cover and keep the cheese in a cool spot.)
  • Heat a large nonstick skillet over moderate heat. Add the wrapped cheese and cook until the meat is browned, about 2 minutes per side. Serve immediately.

Grilled Ham and Cheese Sandwich image

6 slices firm, thinly sliced close-textured bread, such as Pepperidge Farm
3 tablespoons sweet butter, softened
3 thin slices honey-cured ham
1/4 pound sliced Gruyere cheese, white cheddar, or Swiss

Steps:

  • To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
  • Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
  • Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

1 pound flour
1/2 teaspoon salt
1/2 pound butter, chilled and cut into small cubes, plus 2 tablespoons butter
1 egg
2 tablespoons red wine vinegar
1 scant cup ice water
1 medium white onion, small dice
1 bunch spinach, chiffonade
3 cups coarsely grated manchego cheese
1 cup chopped hazelnuts
1 cup dark raisins
Egg wash (1 egg beaten with 2 tablespoons water)

Steps:

  • In a large mixing bowl, combine flour and salt. With a pastry blender or 2 knives, cut in the chilled butter until the mixture resembles coarse crumbs. Add the egg and vinegar. Slowly add the water, as needed, mixing to form the dough, until well blended. Turn the dough out onto a sheet of plastic wrap and knead gently until the dough becomes smooth, only a few seconds. Wrap well and chill for 30 minutes.
  • Saute onion in butter and add spinach over medium heat. Cool and then combine with cheese, hazelnuts, and raisins.
  • On a lightly floured surface, roll half the chilled dough to 1/8 inch thick (keep the other half refrigerated until ready to use). Cut out 3-inch circles. Spoon about 1 tablespoon of the filling into the center of each circle. Brush egg wash around the edges of the dough. Fold the edges up forming a pouch, and seal.
  • Refrigerate the empanadas on greased or parchment lined baking sheets at least 30 minutes.
  • Preheat oven to 375 degrees F.
  • Brush the empanadas with egg wash and bake until golden brown, about 25 minutes.

1 1/4 cups half-and-half (*)
1 cup diced smoked ham (fully cooked)
4 slices bacon, diced
1/2 cup crumbled goat cheese
1/3 cup finely diced red bell pepper
1/2 teaspoon mccormick mediterranean spiced salt
1 pinch ground nutmeg
1/3 teaspoon black pepper
1 tablespoon salted butter
1/3 cup finely diced roma tomato
1/4 cup torn fresh cilantro
1/4 cup crumbled goat cheese
1 dash red pepper flakes

Steps:

  • Preheat oven to 350°F.
  • In a bowl, whisk the eggs, half and half, and seasonings together.
  • In a skillet, saute the bell pepper and bacon over medium heat until bacon until it's midway to crisp. Add the diced ham and butter. Continue to cook for about 3-4 minutes to just warm the ham through.
  • Coat a pie plate or baking dish with cooking spray. Pour the skillet contents into it. Sprinkle with half of the goat cheese. Pour the egg mixture over it. Sprinkle the remaining goat cheese on top.
  • Bake for 30 minute Remove from oven and let stand for 10 minutes. Slice and top with the garnish toppings (divided among the servings).
  • You can substitute a combination of milk & heavy whipping cream or similar depending on your taste, allergies, or fat content preferences.

1 (1-pound) loaf crusty country-style white bread
1/4 cup olive oil
4 teaspoons chopped fresh thyme
1 large garlic clove, minced
6 tablespoons (3/4 stick) butter
1 1/2 cups finely chopped onion
1 1/2 cups thinly sliced celery
1 1/4 cups chopped smoked ham (preferably from 2 meaty ham hocks)
1 cup finely chopped green bell pepper
1/3 cup chopped fresh parsley
1/2 cup toasted husked hazelnuts, coarsely chopped
1 3/4 cups low-salt chicken broth or turkey stock, heated
4 ounces chilled fresh goat cheese, crumbled into 1/2-inch pieces

Steps:

  • Preheat oven to 375°F. Place cherries in bowl; cover with boiling water. Let stand until soft, about 15 minutes. Drain.
  • Cut bottom crust and short ends off bread; discard. Cut remaining bread with crust into 1-inch cubes (10 cups loosely packed). Place in large bowl. Add oil, thyme, and garlic; toss. Spread out on large rimmed baking sheet. Sprinkle with salt and pepper. Bake until golden and slightly crunchy, stirring often, about 20 minutes. Return to same large bowl.
  • Melt butter in large skillet over medium-high heat. Add next 4 ingredients. sauté until vegetables are soft, about 10 minutes. Mix in parsley and cherries. DO AHEAD Bread cubes and vegetable mixture can be made 1 day ahead. Cover separately. Store bread at room temperature. Chill vegetables.
  • Preheat oven to 375°F. Butter 11x7x2-inch glass baking dish. Stir vegetables and nuts into bread cubes. Add hot broth, tossing to coat. Mix in cheese. Transfer to dish. Cover with buttered foil, buttered side down. Bake until heated through, about 25 minutes. Uncover and bake until top is brown, about 25 minutes longer, and serve.

A puff pastry turnover is always a good way of using leftovers - adapt the recipe to whatever cheese you've got

250ml milk
1 tbsp each butter and flour, mixed to a paste, plus extra for dusting
140g button mushroom , cut into quarters
1 tbsp olive oil
140g ham , chopped into small pieces
85g leftover cheese (amount will vary according to type - go with your taste buds), cut into small pieces
1 tbsp chopped herbs - tarragon, parsley and chives all work well
500g block puff pastry
1 egg , beaten

Steps:

  • The first thing to do is to make a thick white sauce that will be the base of the turnover filling. Bring the milk to a simmer, then add the butter and flour paste. Whisk the paste into the simmering milk and allow it to boil for 3-4 mins, whisking gently all the time to prevent it from catching. You should now have a very thick white sauce. Cool the sauce in a bowl. Fry the mushrooms in the oil for 3-5 mins until golden, then leave to cool.
  • Place the ham, cheese and mushrooms into a bowl, then gradually add the white sauce until everything is well coated. Finally, add the herbs.
  • Roll out the pastry on a floured surface to about the thickness of a £1 coin and cut out 4 saucer-size rounds (about 18cm wide), re-rolling the trimmings if you need to. Brush the edges of each round with beaten egg. Spoon the mixture onto 1 side of each round, then fold over and seal the edges well. The turnovers can now be frozen for up to 1 month. Brush the turnover with the remaining egg, then chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Place the turnovers on a baking sheet and bake for about 35 mins until puffed up and golden. Leave to cool slightly and enjoy warm.
