1 10-pound bone-in smoked ham (with water added)
1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
  • Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)

7 lbs bone in ham (you can go larger or smaller, just adjust the cook time accordingly)
1/3 cup BBQ rub
1/2 cup butter
1/2 cup brown sugar
1/4 cup maple syrup
2 1/4 cups apple cider (divided use)
fresh herbs and fruit for garnish
cooking spray

Steps:

  • Preheat a smoker to 250 degrees F. Load the smoker with cherry wood chips.
  • Coat a disposable aluminum pan with cooking spray. Place the ham cut side down in the pan.
  • Sprinkle the spice rub all over the exterior of the ham.
  • Place the pan in the smoker and cook for one hour.
  • Continue to cook the ham for another 2-3 hours, basting every 30-45 minutes with the 2 cups of apple cider.
  • The ham is done when a thermometer inserted into the thickest part of the ham reads 140 degrees F.
  • While the ham is smoking, make the glaze.
  • Place the butter, brown sugar, maple syrup and remaining 1/4 cup of apple cider in a pan over medium heat.
  • Bring the pan to a simmer. Cook for 6-8 minutes or until glaze has just thickened.
  • Brush the glaze all over the ham. Transfer the ham to a platter. Garnish the ham with herbs and fruit if desired, then serve.

1 8 pound spiral sliced ham
1 cup chicken stock
1 cup dark brown sugar
1/4 cup honey
1 Tablespoon dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground cloves
1 Tablespoon Signature Sweet Rub

Steps:

  • Preheat your smoker to 225 degrees f.
  • Place the ham, cut side down, directly on the grill grates.
  • Close the lid and smoke the ham for 1.5 hours.
  • Place the ham in a large 12 inch cast iron skillet. Pour 1 cup of chicken stock over the ham and then cover the ham and the top of the pan tightly with aluminum foil. Close the lid, increase the temperature on your smoker to 300 degrees F and continue cooking for an additional 2 hours, or until the internal temperature reads 140 degrees F.
  • When the ham is almost done cooking, prepare the glaze. In a small saucepan, combine all of the glaze ingredients. Cook over medium heat, stirring frequently with a whisk, just until the glaze comes to a boil. Remove from the heat immediately.
  • Remove the ham from the smoker and open up the foil. Drain off any excess cooking liquid and set aside for serving. Turn the ham over onto it's side and brush liberally with the brown sugar honey glaze.
  • Place the glazed ham into your oven on High broil. Cook for 2-3 minutes, or until the glaze is bubbling and caramelized.
  • Serve immediately with the drippings from the cast iron skillet on the side, if desired.

1 spiral cut ham with bone-in (approx 7-9 pounds)
2 tablespoons dijon mustard
¼ cup pineapple juice (or orange juice)
½ cup pineapple juice (or orange juice)
½ cup brown sugar
2 tablespoons dijon mustard
¼ teaspoon ground ginger
2 teaspoons cornstarch

Steps:

  • Preheat oven to 325°F.
  • Combine dijon mustard and pineapple juice. Brush over ham.
  • If your ham has a plastic disk on the bone, this should be removed and discarded. Place the ham, flat side down in a roasting pan, and cover tightly with foil. Roast 12-15 minutes per pound (or according to package directions).
  • Meanwhile, combine glaze ingredients and bring to a boil. Turn heat down and simmer 2-3 minutes. Cool.
  • 15 minutes before ham is done, remove from the oven and turn the oven up to 425°F.
