When you say "holiday tradition" around our house, this appetizer comes to mind immediately. Every winter, I make lots of cheese logs and freeze them for when I'm expecting company or need to take food to someone's home. The blend of smoked oysters, chili powder, nuts and cream cheese tastes good-even people who don't like oysters may enjoy this interesting appetizer. -William Tracy, Jerseyville, Illinois

3 packages (8 ounces each) cream cheese, softened
2 tablespoons steak sauce
1/4 cup Miracle Whip
1 garlic clove, peeled and minced, or 1 teaspoon garlic powder
1 small onion, finely chopped
2 cans (3-3/4 ounces each) smoked oysters, well-drained and chopped
3 cups chopped pecans, divided
3 tablespoons chili powder
Minced fresh parsley

Steps:

  • In mixer bowl, combine the cheese, steak sauce, Miracle Whip, garlic and onion. Stir in oysters and 1 cup of pecans. Shape into two 9-in. logs. Roll logs in mixture of chili powder, remaining pecans and parsley.

whipped onion cream cheese (Zaar can't find onion whipped cream cheese, from Philadelphia)
85 g smoked oysters or 85 g smoked mussels

Steps:

  • Put the whipped onion cream cheese on each Ritz crackers then top with a smoked oyster. And enjoy!

Smoked oysters provide an easy make ahead appetizer for holiday entertaining. The roll can be refrigerated for up to two days.

2 (8 ounce) packages cream cheese, room temperature
1 tablespoon mayonnaise
2 teaspoons Worcestershire sauce
2 small garlic cloves, minced
2 tablespoons grated onions
1 dash hot pepper sauce
salt
2 (3 5/8 ounce) cans smoked oysters
melba toast or cracker

Steps:

  • In medium bowl (not in food processor) cream cheese with wooden spoon. Stir in mayonnaise, Worcestershire, garlic, onion, hot pepper sauce, and salt to taste. Blend well.
  • Lightly oil a large piece of waxed paper and spread cheese mixture into 16 x 6 inch rectangle.
  • In sieve, drain oysters and rinse with cold water. Pat dry with paper towels and chop finely. Spread on top of cheese rectangle, leaving small border all around. With spatula and using waxed paper as a guide, roll up jelly roll style as tightly as possible, staring from long side. Wrap well and refrigerate overnight.
  • To serve, cut roll into 1/4 inch slices with very sharp knife. Dip knife into hot water occasionally for neater slices. Place on top of rounds of melba toast. Makes about 60 appetizers.

1 (3 3/4 ounce) can smoked oysters, medium or petite, drained on paper towel
4 ounces cheddar cheese, sliced and cut to fit crackers
lemon juice (optional)

Steps:

  • Top crackers with cheddar cheese, then place one to two oysters on top.
  • Lightly sprinkle with lemon juice, optional.
