Smoked Pork Ribs by Timothy Hollingsworth Recipe | Traeger Grills image

Sip & Grip sauce is the key to Chef Hollingsworth's smoked rib recipe.

pork spare ribs
salt and pepper
ketchup
apple cider vinegar
dark brown sugar
molasses
Worcestershire sauce
yellow mustard
garlic, chopped
Yellow Onion (small), sliced
Tabasco Pepper Sauce
crushed chile flakes
kosher salt
mustard powder

Steps:

  • Remove pork ribs from the refrigerator and let come to room temperature. Trim off excess fat as desired and season evenly with salt and pepper.
  • When ready to cook, set temperature to 220℉ and preheat 15 minutes. Place ribs on grill and smoke for about 3 hours.
  • Make sure to check ribs every hour to ensure that they are not becoming too dry. Turn ribs halfway through and baste with Sip & Grip Sauce.
  • After smoking ribs for the 3 hours, remove from grill and wrap ribs in foil. Return to grill for another hour. Ribs are done when they have reached an internal temperature of 202℉. Slice and serve. Enjoy! *Cook times will vary depending on set and ambient temperatures.

  • Setup your Traeger to cook at 225 degrees and place ribs on grill. Cook until ribs are at 155 degrees – approx 3 hours. Spritz the ribs with apple juice every hour until they get up to temp.
  • When the ribs hit 155, remove them from the Traeger, and use tongs to place each of them in a large roasting dish or disposable pan.
  • Add a half cup of apple juice to the roaster, along with four pats of butter. Cover the pan tightly with aluminum foil, and return the ribs to your smoker.
