2 tablespoons prepared pesto
2 whole wheat bagels, split and toasted
1/8 teaspoon coarsely ground pepper
4 to 5 ounces smoked salmon or lox
2 slices tomato
2 Bibb or Boston lettuce leaves

Steps:

  • Spread pesto over bagel bottoms; sprinkle with pepper. Layer with salmon, tomato and lettuce leaves. Replace bagel tops.

4 bagels
8 tablespoons cream cheese
4 tablespoons drained capers
1/4 cup finely chopped dill
1/2 pound thin smoked salmon slices
4 slices red or Vidalia onions

Steps:

  • Slice the bagels through the center, sandwich fashion.
  • Toast the cut side of each bagel until golden brown.
  • Smear each bagel half with one tablespoon of cream cheese. Scatter equal amounts of capers and dill over four bagel halves. Press down lightly with a fork to make the capers and dill adhere.
  • Cover each smeared bagel half with equal portions of salmon slices. Cover each with one onion slice. Top each sandwich with a second bagel half and press.

2 Soft Bagels or Pumpernickle Bagels
5-8 thin slices Smoked Cold Salmon
1 small Fresh avocado, sliced
1 tsp Fresh Dill or parsley, chopped
2 tsp Spring onion greens or chives, finely chopped
4 -6 Tbsp Spreadable cream cheese (flavored with chive or garlic is good)
1 Cucumber (Persian variety), very thinly sliced
1 Tomato, diced
A few sliced rings Red onion
1 tsp Drained capers

Steps:

  • Split the bagel in half horizontally. (Optional toast the cut sides on a griddle with some butter, if you like the bagels warm)
  • Spread cut sides with as much cream cheese as you like.
  • Over the cheese on the bottom bagel half, sprinkle the chopped dill and spring onion greens.
  • Next, add the following layers: cucumber sliced, smoked salmon pieces, avocado slices, red onion rings, diced tomato, and capers.
  • Set remaining bagel half, cream cheese side down, over the filling.
  • Serve will the filling is still cold for best taste.

4 thin stalks asparagus (about 2 oz)
1 1/2 oz reduced-fat cream cheese (Neufchâtel), softened (about 2 rounded tablespoons)
1/2 teaspoon dried dill weed
1 teaspoon grated lemon peel
1 teaspoon lemon juice
1 bagel, cut in half horizontally
1 1/2 oz salmon lox (from 3-oz package)
Lemon wedges, if desired

Steps:

  • Break off tough ends of asparagus as far down as stalks snap easily. Cut asparagus in half crosswise into about 3-inch pieces. In 3-quart saucepan or skillet, place steamer basket in 1/2 inch water. Place asparagus in basket. Heat to boiling; reduce heat. Cover; steam about 5 minutes or until crisp-tender. Immediately plunge asparagus into ice water until cold. Drain on paper towels.
  • In small bowl, mix cream cheese, dill weed, lemon peel and lemon juice until well blended. Spread on cut sides of bagel halves.
  • Arrange asparagus pieces on cream cheese mixture; top with salmon. Serve with lemon wedges.
