CARIBBEAN SPICED CORN-ON-THE-COB
A spicy summer time treat that adds a different approach to your average corn on the cob. I found this recipe in "Woman's World" Magazine with a little of my own changes, and use it almost every time I make corn. Very adjustable, quick & easy to make. Great for picnics or BBQ's, and gives you that "your-on-vacation" feeling. If you know someone who doesn't like corn-on-the-cob, this just might make a believer out of them. Enjoy! =^_^= P.S. This is even good drizzled over microwaved frozen or canned corn if you don't have time to cook cobs.

Steps:
- Preheat oven to 350'F.
- Rinse the ears of corn.
- Put corn cobs directly on the middle rack of the oven.
- Bake for 30 Minutes.
- Remove husks & cut cobs in half.
- Transfer to a large serving bowl.
- In a separate bowl mix all of the ingredients together.
- Pour over corn & toss to coat.
- Sprinkle Cilantro if desired.

- (If you don't have garlic-flavored hot sauce, you can substitute it with regular hot sauce + 1/2 teaspoons garlic powder instead).
- (Leftover butter sauce can be saved in the fridge for next time).

Steps:
- Soften cream cheese and butter, by putting in microwave for 20-30 seconds.
- Mix together with mixer until smooth.
- Stir in corn (2) cans drained (1) can undrained.
- Stir in diced jalapenos- to taste.
- Bake at 350 for 30 minute.
BARBECUED, SPICED LIME CORN ON THE COB
We love corn on the cob...but have to resist the temptation to smother it in butter. This is simple,tasty and low fat too!!

Steps:
- Pull the husks back from the corn, then remove and discard the silks. Rub each cob with a wedge of lime the fold back the husks to cover the kernels.
- Cook over medium hot coals for about 10 mins (approx) turning frequently until the corn is dark golden and the kernels tender.
- Mix together the salt and the cayenne pepper.
- Pull the husks away from the corn and sprinkle over the salt mixture. Serve with a wedge of lime for extra rubbing.

HOT CORN WITH CHIMICHURRI BUTTER

Steps:
- Place the vinegar, lemon juice, parsley, oregano, garlic and red pepper flakes in a food processor and pulse until finely chopped.
- Transfer the mixture to a piece of cheesecloth or a kitchen towel and wring out the excess liquid. Place the mixture in a small bowl and stir in the butter.
- Transfer the chimichurri butter to a sheet of plastic wrap and shape it into a log. Wrap in plastic wrap and refrigerate until it has hardened.
- Meanwhile, bring large pot of salted water to a boil. Add the corn and boil until it is tender, about 5 to 7 minutes. Drain and transfer to a serving platter.
- Place a disk of chimichurri butter on each ear of corn and serve sprinkled with Cotija cheese and a lime wedge on the side.

- Grill corn on grill or you can steam or even boil the corn.
- Mix all the dry spices together.
- Dip an orange wedge in olive oil, dip into spice mix and rub into corn.
- Cut corn into bite size pieces and stick a tooth pick inches.
- Blend yogurt with mint and 1/4 tsp salt till smooth.
- Serve corn with yogurt mint dip.
- Note:.
- Use any blend of your favorite spices ! Good spices to use are cumin, paprika, garlic powder, ginger powder, curry powder, etc.
