SMOKY WHITE BEAN AND HAM SOUP
This Southern-style smoky white bean and ham soup adapted from chef Hugh Acheson is hearty and comforting.

- Quick-soak the beans: Place the beans in a medium pot and cover with 2 to 3 inches of water. Bring to a boil over high heat and cook for 1 minute. Remove the pot from the heat and let sit for 1 hour. Drain in a colander.
- Place the drained beans into a 5.5-quart Dutch oven or large pot. Add the water, chicken stock, bay leaves, quartered onion, and ham hocks. Bring to a boil over high heat, then cover and simmer over low heat until the beans are just tender, about 1 hour (depending on the size of the beans, it could take a bit longer).
- Once the beans are tender, pull out the bay leaves, onion remnants, and ham hocks. Discard the bay leaves and onions, but set the ham hocks aside to cool.
- Add the minced onion, carrots, celery, tomatoes, garlic, thyme, and 2 teaspoons of salt to the pot. Increase the heat to medium and cook, uncovered, for 15 minutes. While the soup is cooking, and when the ham hocks are cool enough to handle, pull the meat from the hocks, discard any bone, fat, and tough sinew, and chop the meat finely.
- Use a ladle to transfer about 2 cups of the beans and vegetables, along with a bit of broth, to a blender or food processor. (If using a blender, be sure to remove the center knob on the lid and cover with a dishtowel to avoid splatters.) Purée until smooth, and then stir the mixture back into the soup. Add the meat and kale to the soup and simmer over medium-low heat for 5 minutes more. Taste and adjust the seasoning with more salt, if necessary (I usually add about 1 teaspoon more; beans require a lot of salt to bring out their flavor). At this point, you can serve the soup or refrigerate it for up to 3 days. (It will thicken up in the fridge; thin it with a bit of water, if necessary.)
- When you're ready to eat, garnish each bowl with a drizzle with olive oil (if using) and a heap of grated cheese.
- Freezer-Friendly Instructions: The soup can be frozen for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot. through.

- Place black beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain beans and rinse with fresh water.
- Heat oil in a large Dutch oven or stockpot over medium heat; cook and stir yellow onion, paprika, and cumin seeds until fragrant, about 3 minutes. Add red bell pepper, green bell pepper, garlic, oregano, and bay leaves; cook and stir until onion is translucent and bell peppers are tender, 6 to 8 minutes.
- Mix vegetable stock, black beans, tempeh, rum, and jalapeno pepper into onion mixture. Increase heat to medium-high, bring to a simmer, reduce heat to medium-low, and cook until beans are tender, about 45 minutes.
- Pour water into bean mixture; season with 1 1/2 teaspoons salt. Cook, stirring occasionally, until beans begin to fall apart and soup thickens, 30 to 40 minutes; season with salt and pepper. Remove and discard bay leaves from soup.
- Ladle soup into bowls and garnish with hard-boiled eggs and red onion.

SMOKY WHITE BEAN SOUP RECIPE

Not anymore! You might not believe us, but this Smoky White Bean Soup is ready from start to finish in just 25 minutes. That's less time than it takes Mama to put her face on! Not only is this recipe super quick, but it cooks in one pot. A 25-minute, one-dish recipe that's comforting and filling is a winner in every sense of the word. This recipe starts with one of our favorite things-bacon-but only one thick-cut slice of bacon, so make it an extra thick slice. This recipe is so easy because that you're not chopping your time away. Pre-chopped onion, pre-chopped celery, one minced garlic clove, and a teaspoon of chopped fresh thyme are next in the pan, and they cook right in the bacon drippings. Talk about yum. Add chicken broth, cannellini beans, one chopped and seeded plum tomato, one bay leaf, salt, and pepper, and you're done. Really, we wouldn't lie! This soup only simmers for eight minutes after it's brought to a boil, and it's ready to eat. This recipe is so easy to whip up the fastest lunch or dinner ever, and you can make it ahead to take to work for the most comforting brown-bag lunch in the office.

- Cook the chopped bacon in a medium saucepan over medium until crispy, about 6 minutes. Remove bacon, and drain on paper towels, reserving drippings in skillet. Cook the onion, celery, garlic, and thyme in the reserved drippings in saucepan until beginning to soften, about 3 minutes. Stir in the chicken broth, cannellini beans, chopped plum tomato, bay leaf, and kosher salt and black pepper. Bring to a boil over medium-high; reduce heat medium-low, and simmer, stirring occasionally, 8 minutes. Serve hot.
SMOKY BEAN SOUP
This is a recipe from my dad's vegan cookbook. My sister used to be vegan, so he made it up for her and the rest of us, if we wanted to try the recipes. Time does not include soaking overnight. You can do the quick soak method, but may have to cut down the first cook time to 1 hour. If your family is like mine, I would puree the whole thing after it's done, LOL! Then they can't complain about the beans!

- Soak the beans overnight in triple the amount of water, rinse well, and wash again.
- In a large soup pot, place vegetable stock and beans, and simmer for 1 to 1 1/2 hours, covered, until beans are tender and start to become mushy.
- Add thyme, salt, carrots, onions, celery, pepper and liquid smoke to taste, and simmer for 30 more minutes, covered, stirring several times to prevent scorching on the bottom of the pot.

- Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
- Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.
- Top each serving with cooked sausage, a dollop of sour cream, and a small handful of watercress. Sprinkle with pepper and celery leaves; serve.
SMOKEY BLACK BEAN SOUP
I made this when I was coming down with cold symptoms and wanted a comforting soup that I could taste despite my stuffy nose. I thought it was geat so I thought I'd share. Please note: There is NO substitution for smoked paprika. Servings are totally guessed.

- Heat the oil in a pot over med heat.
- Add the onions, celery and garlic and saute for about 5 minutes.
- Add the broth, tomatoes, cilantro, cumin, and smoked paprika. Bring to a soft boil. Reduce heat, and cover and simmer for 20 minutes.
- Add the black beans and simmer for an additional 10 minutes.
- Stir.
- At this time, if desired, puree 1/3 to 1/2 of the soup for a thicker texture. Totally optional.
- Add salt, if needed.
- Serve garnished with a dallop of the optional FF sour cream.

- Dice the onion and mince the garlic. Remove the stem and seeds from the jalapeño, then dice the remaining jalapeño flesh. Add the onion, garlic, jalapeño, and olive oil to a soup pot and sauté over medium heat for about 5 minutes, or until the onions are soft and translucent.
- While the onion, garlic, and jalapeño are sautèing, use a blender to purée two of the three cans of black beans (with liquid from the can). If the beans are too thick to purée, add just enough water to make them blend.
- Add all three cans of black beans to the soup pot (one can of whole beans with liquid, two puréed), along with the can of fire roasted diced tomatoes (with juices), the cumin, oregano, and smoked paprika. Stir to combine.
- Place a lid on the pot and allow the soup to come up to a simmer. Allow the soup to simmer, stirring often, for about 15 minutes. After simmering for 15 minutes, taste and add salt to taste (I added 1/2 tsp). Serve hot with your choice of toppings.
