TASTY COLLARD GREENS
A classic recipe for collard greens that uses smoked turkey to add some flavor. Greens are simmered in chicken stock, then spiced with a dash of red chile flakes.

Steps:
- Heat olive oil in a large pot over medium heat. Add garlic, and gently saute until light brown. Pour in the chicken stock, and add the turkey leg. Cover the pot, and simmer for 30 minutes.
- Add the collard greens to the cooking pot, and turn the heat up to medium-high. Let the greens cook down for about 45 minutes, stirring occasionally.
- Reduce heat to medium, and season with salt and pepper to taste. Continue to cook until the greens are tender and dark green, 45 to 60 minutes. Drain greens, reserving liquid. Mix in red pepper flakes if desired. Use liquid to reheat leftovers.

- Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until browned and fragrant, 3 to 4 minutes. Add collard greens and red pepper flakes; cook and stir until greens are slightly wilted, 2 to 3 minutes.
- Combine vegetable broth, cider vinegar, brown sugar, liquid smoke flavoring, and paprika in a large pot; add collard greens mixture. Cover pot and simmer until greens are very tender, 40 to 50 minutes. Strain collard greens before serving.

FRESH CRANBERRY SAUCE
A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.

HOMEMADE CRANBERRY WINE
Making your own cranberry wine is easy, using fresh fruit or cranberry juice. This recipe makes one gallon of cranberry wine, but can be increased or decreased based on your needs.

- Add the sugar and cranberry juice to a small saucepan and heat it just enough to dissolve the sugar. If using fresh cranberries, add water instead of juice and use it to dissolve the sugar.
- Allow the sugar and juice mixture to come to room temperature. While it's cooling, dissolve the yeast packet in a small amount of lukewarm water. Allow it to bloom for at least 5 minutes.
- Add the yeast nutrient and dried cranberries to the juice/sugar mixture and then pour it all into a primary fermentation vessel. Add the dissolved yeast.
- Cap with a water lock and allow the mixture to ferment in primary for 2-3 weeks. Alternately, allow the mixture to ferment without an airlock for about 5 days, then rack into secondary and add an airlock.
- Either way, once the mixture is in secondary, add an airlock. Ferment in secondary for 6-8 weeks before bottling. For a very dry wine, rack the cranberry wine a second time and ferment for another 6-8 weeks.
- Bottle in wine bottles and age for at least 3 months, but preferably a full year from bottling.

- Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
- Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. - Bring a soup pot to a medium heat and add extra virgin olive oil. Depending on your garlic preferences and garlic clove size, add 6 to 8 minced garlic cloves to the pot. Saute garlic in oil a few minutes, until fragrant.
