12 slices smoked beef
½ cup ketchup
½ cup mayonnaise
½ cup apricot jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim the fat from the smoked meat, place a piece on each chicken breast slice and roll. Fasten with toothpicks and place seam side down in a 9x13 inch baking dish.
  • Mix together ketchup, mayonnaise and jam. Pour mixture over chicken and bake uncovered in the preheated oven for 20 to 25 minutes.

1/2 cup cucumber, seeded and chopped
1/2 teaspoon dill weed
4 flour tortillas
4 ounces smoked turkey

  • Combine cream cheese with onions, cucumber and dill weed.
  • Spread each tortilla with 1/4 of the mixture, top with some smoked turkey and roll up.
  • The rolls may also be sliced across to make appetizers.
