MOTHER'S PASTIES
PASTIES were a must years ago when men worked the mines in northern Michigan. The housewives made them in the morning and wrapped them tightly in newspaper so they would stay warm until lunch break. - In a large bowl, combine the potatoes, carrots, onion, salt and pepper. Crumble beef and pork over potato mixture and mix well. Add butter and toss to coat; set aside. , For pastry, in a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. , Divide dough into five portions; roll each into a 10-in. circle. Place 1 cup of filling in the center of each circle. Fold pastry over filling and seal edges tightly with a fork; cut slits in the top of each. , Place on a greased baking sheet. Bake at 375° for 50-60 minutes or until golden brown.

BAKED HAMBURGER PATTIES WITH PASTA SAUCE
I have made this easy recipe many times, it is really good, make certain that you purchase a larger crusty Italian-style bun that will hold up to the sauce --- yield is only estimated depending on how large you make the patties, and all ingredients can be adjusted to suite taste :)

Steps:
- Grease a 13 x 9-inch baking dish.
- Flavor the ground beef with your favorite ingredients.
- Shape into about 8 patties.
- Coat the hamburger patties with flour.
- In a large skillet, brown the patties on both sides in butter, then arrange in the baking dish.
- Pour half of the pasta sauce over the patties, and spread the sauce with a spoon to cover the patties (do not worry if they are not completely covered with the sauce).
- Sprinkle with Parmesan cheese, then cheddar cheese.
- Top with remaining sauce.
- Bake in a 400°F oven for about 25 minutes, or until patties are no longer pink.
- Serve the patties and the sauce on buns and sprinkle more cheese on if desired.

ANGEL HAIR PASTA PATTIES
These delicious little babies are easy to put together and everyone loves them. My kids couldn't get enough of them when they were growing up.

- Cook and drain pasta.
- Heat 1 teaspoon oil in skillet over medium heat. Cook carrots, basil, salt and spinach in oil about 2 minutes, stirring occasionally. Remove vegetable mixture from skillet.
- Mix together cooked pasta, eggs, ricotta cheese, Parmesan cheese and pepper. Heat 1 teaspoon oil in skillet over medium-high heat. Drop pasta mixture by 1/2 cup mounds into the hot oil. Cook patties in oil 6 to 8 minutes, turning after 4 minutes, until golden brown.
- Top patties with spaghetti sauce and veggies.

ANGEL HAIR PATTIES
Egg, cheese and angel hair pasta patties get a tasty vegetable and spaghetti sauce topping.

- Cook and drain pasta as directed on package.

LEFTOVER STUFFING PATTIES
You could just re-heat the leftover stuffing, sure. Or, you can give it a crispy makeover that will liven it up. Serve with leftover gravy if desired.

- Line a baking sheet with parchment paper. Place leftover stuffing in a mixing bowl. Stir in beaten egg until evenly combined.
- Scoop 1/2 cup of mixture up and form a patty. Place patty on the parchment lined baking sheet. Repeat 3 more times until you have 4 patties.
- Place baking sheet in the freezer and freeze for at least 1 hour.
- Heat oil in a large skillet over medium-high heat. Place patties in the skillet and cook, undisturbed, for 5 minutes. Carefully flip and cook 5 minutes more or until desired browning is achieved.

A traditional Upper Peninsula of Michigan treat! Complete with rutabaga! I am from the UP and this is the real deal! Rub pasties with a little milk for a golden color.

- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape into a ball. Wrap in plastic and refrigerate.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- In a large bowl, combine meat, potatoes, onion, rutabaga and chopped carrots. Season with salt and pepper. Divide dough into six pieces, and shape into balls. On a lightly floured surface, roll each ball into a 6 inch round. Place approximately 1 cup filling on one half of each. Dot each with 1 tablespoon margarine. Draw the other half of the pastry over the filling. Crimp edges to seal in filling. Prick with a fork and place on prepared baking sheet.
- Bake in preheated oven for 1 hour.

VEGETARIAN PASTIES
I came up with this recipe because I wanted a vegetarian version.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Make the dough: mix flour, salt and baking powder together in a medium size mixing bowl. Cut in butter. Stir in egg, vinegar and 1/2 cup water. Continue stirring until dough is moist enough to be formed into a ball (add more water if necessary). Form the dough into a large ball.
- Make the filling: bring a pot of 3 cups water to boil, add lentils and continue to boil for 30 to 45 minutes; until lentils are tender. Watch the lentils and add water if necessary.
- Wrap the potatoes in aluminum foil and bake them for 30 minutes in the preheated oven. When the potatoes have cooled cut them into small pieces and mix them with the lentils.
- In a frying pan saute onions with oil. Stir the onions into the potato-lentil mixture; season with salt and stir.
- Divide the dough into 6 - 8-inch circles. Lay the circles on a flat, floured surface. Place one cup of filling into the center of each circle. Fold the dough around the filling; seal the edges and arrange the pasties on an ungreased cookie sheet. Bake for one hour in the preheated oven.
